Chicken Pot Pie Soup – How It Became A Favorite

One day I was trading recipes with a friend of mine and she mentioned her family loved Chicken Pot Pie Soup. Chicken Pot Pie SOUP? What exactly was that? And how come I never heard of it before?!? It turns out it is basically the same dish, but in a soup version. I needed to know the ingredients and I HAD to make this.

And soon after I found out about this yummy soup, I made it for dinner. It was super easy to make. Like, embarrassingly, easy. This is the type of meal you can throw together and everyone will love it. Do you have a crock pot? If you do, you can pop some chicken in the crock pot in the morning and throw dinner together in the evening in less than 20 minutes.

Dinner was ready quickly. It looked and smelled delicious. It was easy to make which is great. Would it be as good as I hoped? We sat down to dinner to find out. After just a few bites, we all agreed that the Chicken Pot Pie Soup was a hit! My entire family devoured it and then got seconds. And then devoured those as well. That was all the proof I needed when deeming this a Favorite Dinner on my Pinterest board.

Chicken Pot Pie Soup

There are minimal ingredients in this yummy soup which always wins bonus points for me, when it comes to recipes. How easy can a recipe be if it has 10 million ingredients in it? Less is best, that’s my motto when it comes to cooking!

Ingredients

The only ingredients you will need for this recipe is chicken, cream of chicken soup, cream of potato soup, milk, frozen vegetables, and diced potatoes. That’s it. Sometimes it might be difficult to find cream of potato soup and that is okay. Although it is best with that soup, you can still enjoy this meal without it. Just add extra cream of chicken soup in it’s place and add extra diced potatoes. Nobody will notice the difference.

  • 2 cans Cream of Chicken Soup Make it healtheir by using the Healthy Request Soup
  • 2 cans Diced Potatoes

Instructions

Cooking The Chicken

  • Put chicken in the crockpot and cook on low for 6 hours.
  • When chicken is cooked, shred chicken to use in the Chicken Pot Pie Soup.

  • Put all ingredients in a large pot.
  • Stir well and cook for approximately 15 minutes – until well blended and the vegetables are not frozen.
  • Serve with Crescent Rolls.

Ground Turkey Sweet Potato Skillet w/Baby Carrots

Ground turkey sweet potato skillet with baby carrots has been a family favorite in my house for years. I recently posted my plated dinner on my Facebook feed and had numerous friends reach out asking for the recipe! There are so many great things about this recipe that I’m positive you will want to make this favorite dinner soon!

What Makes This A Favorite Dish?

This skillet dish is great for all kinds. For one, it is a 1-pan meal. You cook everything in 1 pan! That means less cleanup at the end. And who wants to clean up a huge mess after you cook a meal? Certainly not me. I can’t imagine that anyone would WANT to clean more. The less steps it takes to relaxing at the end of the day, the more I want in!

Another great thing about ground turkey sweet potato skillet is that all of the ingredients are cooked together to make a flavorful and complete meal. The savory taste of cumin and chili pepper really bring the ground turkey, sweet potatoes, and baby carrots to a new level. You can mix and match the amounts, if you like certain spices more than others. You are in charge, take it!

Ingredients Needed

  • 6 each Sweet Potatoes peeled and cubed pre-cooked in microwave
  • 2 lbs Ground Turkey
  • 1 medium Yellow Onion
  • 1 cup Mozzarella Shredded
  • 3 tbsp Olive Oil
  • 3 tbsp Cumin
  • 2 tbsp Garlic Minced
  • 2 cups Baby Carrots pre-cooked in microwave
  • 2 tsp Chili Powder
  • 1/2 tsp salt to taste
  • 1/2 tsp pepper to taste
  • Sour Cream as a topping Greek Yogurt is a great sour cream alternative

Easy To Make

This skillet creation is really easy to make. While you work on cooking a few things, you can be prepping the next steps. For example, while the turkey is cooking, you can microwave the baby carrots (in a small bowl of water) to soften them up, essentially, cooking them. After the carrots are done, you can add the sweet potatoes to the microwave to pre-cook those. Because these don’t have to be mushy, you won’t have to wait 15-20 minutes for those to be ready, approximately 10 minutes will be fine.

This savory dish can be cooked in less than 30 minutes. I have made this dinner many times on nights that I had limited time to make supper and it comes together quickly every time. It’s a huge lifesaver when you are trying to feed the starving people in your family on a tight time schedule.

How Does It Taste?

Not only is this recipe healthy, it is absolutely delicious! Yes, you can have a healthy meal and it can still taste great. The ground turkey is low fat which is a great alternative to red meat which is generally, fatty. Sweet potatoes have more nutritional value than regular potatoes. They contain more fiber per serving, more vitamin A & C, and calcium as well as other essential nutrients.

Ground turkey sweet potato skillet with baby carrots is pretty healthy, we’ve established that. In addition to that, it really has a yummy taste that is super easy to eat. The sweet taste of the sweet potatoes and carrots is a great contrast to the cumin and cheese that are added in to this dish. It’s a clean way to eat a comfort type of food. And you won’t feel guilty going for seconds because you guessed it, it’s healthy!

Ingredients

  • Next, mix onion and pre-cooked carrots and cook for approx 3-4 minutes.
  • Then add the pre-cooked sweet potatoes to the mixture and incorporate well.
  • Top with shredded mozzarella and let it melt.
  • Remove from heat.
  • Serve with sour cream or yogurt and/or cilantro – ENJOY!

The Best Ground Turkey, Kale, & Brown Rice Soup

Ground turkey, kale, and rice soup sounds really healthy. Almost too healthy. As if it won’t taste good. How can healthy be something I crave for dinner? This soup is so delicious, you will feel even better eating it because it’s good for you.

I had never really made a homemade soup before. Of course, I had thrown chicken broth in a pot with tortellini before and added some carrots, but that was about the extent of my homemade soups. It was winter time in the North East which means the temps were FREEZING. The best way to warm up is to have a nice bowl of hot soup, preferably homemade.

Finding A Soup Recipe

I was on the hunt for a soup recipe that tasted great, easy to make (always looking for easy recipes!), and hearty. I love soup, but sometimes soup isn’t a great option for dinner since it isn’t known for filling you up. Nonetheless, I found a recipe that looked like it matched my requirements. It sounded super healthy. Most people would probably be excited for a healthy soup, but I was skeptical. Healthy would be a good thing, but would it taste good?

This soup had flavorful ingredients like shallots and herbs de provence so I thought it had a good chance of being tasty. I added this meal to my weekly meal planner and added the ingredients to my weekly shopping list and got excited to make this ground turkey, kale, rice soup!

Making The Soup

The big day came and I was ready to go. After gathering up all of my ingredients and was ready to get started on the soup recipe. I set aside almost a full hour to prepare this soup. Okay, I was ready, yet nervous. New recipes always scare me – what if they aren’t good? What if nobody wants to eat dinner? Then what will we have? Ever have those thoughts??

I plowed ahead and got cooking. I have to say, this soup is really easy to make. Aside from chopping up the shallots, carrots, and red bell pepper, you don’t have much to prep. And as each stage was cooking, you can prep for the next step and/or clean up the previous one. I like cooking in stages for sanity and sanitary purposes.

Ingredients

  • 2 tbsp Olive Oil Extra Virgin is my favorite
  • 5 Shallots Chopped into small pieces
  • 16 oz Baby Carrots Cut into 1/2″ pieces
  • 1 Red Bell Pepper Chopped into small pieces
  • 16 oz Ground Turkey
  • 1 tbsp Herbs de Provence
  • 5 cups Chicken Broth I prefer low sodium, no fat chicken broth
  • 1 can Diced Tomatoes 14 oz can
  • 2 cups Brown Rice Cooked
  • 1 bunch Kale Cut into small pieces
  • 1 tsp Black Pepper
  • 1/4 cup Parmesan Cheese

Instructions

  • Warm the oil over medium high heat.
  • Add shallots, carrots, and bell pepper to the pot and saute for approx 8-10 minutes.
  • Next, add the turkey and continue to stir until the meat turns white (approx 5-7 minutes).
  • Then, add herbs de Provence and stir for another minute.
  • Add the chicken broth, tomatoes, and rice and bring to a boil.
  • Stir in kale and season with a dash or two of salt and the black pepper.
  • Reduce the heat to medium-low, cover, and simmer until the vegetables are tender (about 15minutes).
  • Ladle the soup into bowls and add parmesan cheese to each.

Healthy Soup For The Win

As the soup was simmering towards the end stage, the house filled up with a mouthwatering aroma. Finally, I broke down and decided I had to try a tiny bit just to make sure what I smelled would actually taste good. And yes, it did! What a relief. This dinner would be a success. Phew!

Once you ladle the soup into individual bowls, top each with parmesan cheese. Freshly grated parmesan cheese really makes this soup remarkable.

In conclusion, my family enjoyed this dinner and were quite surprised that they got full. Nobody even asked what that ‘green stuff’ was (ie kale). I was even more relieved that they liked this soup and weren’t hung up on the fact that it was good for them. Therefore, I call this a successful dinner recipe!

Broccoli Rabe Brown Rice

Broccoli Rabe Brown Rice combines your veggie and starch into one amazing side dish. If you can’t get your people to enjoy green veggies, try making them different varieties of veggies and saute them with garlic and oil. Then mix them with rice so that they aren’t overly concerned about what that “green stuff” is.

Broccoli rabe is a great side on it’s own, but it really helps spruce up plain brown rice when you mix them together. Brown rice is much better for you than white rice (or so the experts say), but it is pretty bland unless you add oil, butter, etc – you know, all the things that will then make the side BAD for you?! In order to keep the dish on the healthy side, I like to mix in sautéed vegetables.

While you are cooking your favorite main dish for dinner, you can have the rice and broccoli rabe cooking at the same time. With this side, you won’t have a million pots, pans, and bowls to clean up which makes this an A+ recipe in my book. Less is always more when it comes to cooking and cleaning. Wouldn’t you agree?

If you have brown rice (or any rice plain rice) leftover from a previous dinner, use that! Just heat it up in the microwave and then add the broccoli rabe to it. Re-using leftovers can save a ton of time. You just have to remember that you have them in your refrigerator. Or maybe that’s just me?

Broccoli Rabe Brown Rice

Broccoli Rabe Brown Rice – 2 sides combined into 1

Ingredients

Brown Rice

  • 2 cups brown rice
  • 3 cups water

Broccoli Rabe

  • 1 bunch broccoli rabe
  • 3 tbsp olive oil
  • 2 tbsp minced garlic
  • 2 tbsp parmesan cheese

Instructions

Brown Rice

  • Add 1 cup of brown rice to a microwavable bowl
  • Add 2 cups of water to brown rice
  • Cover with paper towel
  • Microwave on medium heat for 15 minutes
  • Mix rice and check to see if it is cooked – might need additional 4-7 minutes

Broccoli Rabe

  • Drizzle olive oil in pan and heat on medium heat for 1 minute
  • Add garlic to pan and cook for 1 minute
  • Place broccoli rabe in pan and cook for approx 5 -7 minutes
  • Reduce heat to low
  • Top with parmesan cheese and mix
  • Remove from heat and chop broccoli rabe into 1.5 inch pieces
  • Mix together rice and chopped broccoli rabe in the broccoli rabe pan
  • Plate & Enjoy!

Honey Garlic Salmon

Honey garlic salmon is one of my favorite salmon dishes. It is really, really good and it’s super easy to make. Plus, my entire family loves this dish. Therefore, I really think this dinner recipe is a win-win-win!

The sauce for the honey garlic salmon isn’t too garlic-y or too soy sauce-y. You know those recipes that are good, but they have a little too much of one ingredient? This isn’t one of those recipes. This is sweet, but not too sweet. The honey and soy sauce really balance themselves along with the garlic. It really is a great dinner that everyone will love.

Doesn’t this dish look fabulous? It looks like it’s from a fancy restaurant, but in reality, I made it in my kitchen in less than 15 minutes! You know what’s even crazier? You can do make this too!

I almost hate telling people how to make yummy dishes that are super easy. I feel like people would be more impressed if I shared difficult recipes. Realistically though, it is better to share delicious dinner recipes that are super easy! An easy recipe is more likely to be recreated after all.

We don’t have time to be slaving in the kitchen all day. I mean, we are lucky to have 30 minutes to prep dinner. Basically, it takes 30 minutes to prep dinner, 10 minutes to eat, and then another 30 minutes to clean up. Yikes! It eating only takes 10 minutes, we need to SAVOR that 10 minutes!

Get your apron on and get this dinner moving.

First, start by taking the salmon out of the refrigerator. Then gather up the rest of your ingredients. It’s best for the salmon to be room temperature before you cook it (approx. 20 minutes after you take out of the frig) so while you are waiting for that to be temp-ready, clean up your kitchen table and get it set for dinner.

Now you are ready to get cooking. Drizzle the olive oil in your pan and heat it up for 1 minute over medium heat. Place the salmon in the pan. Add some salt & pepper to the side facing up. Cook the salmon for approx. 4 minutes (may need more or less, depending on the thickness of the salmon).

Next, flip the salmon over carefully. Fish is very delicate even when it’s not fully cooked. Sprinkle more salt and pepper on the side facing up now, if desired. Let this side cook for approx. 3-4 more minutes.

While the salmon continues to cook, add the sauce ingredients to a medium bowl and then whisk together. This doesn’t take long and you should still have time before the salmon is cooked. Now is the perfect time to put away the ingredients and tidy up your kitchen!

When the salmon is done, add the sauce and cook for an additional 1-2 minutes more. Shut off heat and plate the salmon. Be sure to add more sauce from the pan to each piece of salmon – that sauce is too good to waste.

Take a picture of your masterpiece so that you can share it with others. Be sure to take a picture before you start eating – you will forget otherwise because this dish is so good!

Honey Garlic Salmon

Honey Garlic Salmon – Easy & Delicious!

Ingredients

Sauce

  • 4 tbsp honey
  • 2 tbsp soy sauce I prefer the low sodium kind
  • 1 tbsp apple cider vinegar any vinegar will do except balsamic
  • 1 tbsp minced garlic more or less, depending on your preference

Salmon

  • 1 lb salmon
  • 1 tbsp olive oil

Garnishes

    Instructions

    • Bring salmon to room temp for approx 20 min before cooking
    • Pat salmon down with paper towel to remove excessive moisture
    • Sprinkle with salt and pepper to taste
    • Drizzle olive oil to pan and heat on medium heat for 1 minute
    • Place salmon in pan and cook for 4 minutes
    • Turn salmon to other side and cook approx 4 more minutes
    • While salmon is cooking, mix sauce ingredients in a bowl and whisk together
    • Pour sauce over salmon and continue to cook for 1-2 more minutes
    • Sauce will thicken a bit, if it thickens too much, add 1/2 tbsp of water
    • Plate salmon and add some additional sauce from pan on top of each piece of salmon
    • Enjoy!
