And while it is a delectable dinner that could be served in a high-end restaurant, this pork dish is an easy crock pot dinner that you can make for your family any night of the week!

Easy Crock Pot Dinner

I’ve seen so many crock pot meals that consist of chicken, pork, or beef that entails slow cooking the meat all day with a simple gravy, salsa, or seasoning. These dinners can be really tasty and easy to make, but they can be somewhat boring. Don’t get me wrong, they still taste great, but they can be boring as far as presentation or extraordinary dinners are concerned.

This herb roasted pork with white wine sauce is an extraordinary dinner that is still an easy crock pot meal. Do I have your attention? I hope so because you will love the gourmet taste of this simple dinner recipe and will want to make this a Sunday dinner or any night dinner. Why the heck not, it’s easy to make, you can make this in place of Taco Tuesdays…maybe not every Tuesday though. Tacos are pretty freaking amazing!

Herb Roasted Pork Secret Ingredient

As previously mentioned, this is a very easy to make crock pot meal. There are minimal ingredients needed to make this amazing dinner. And, you probably have them on hand in your pantry! All you need is:

  • Pork
  • Onions
  • Chicken Broth
  • Garlic (chopped, minced, or even garlic powder)
  • Herbs de Provence
  • White Wine (any kind will work)
  • Cornstarch or Flour

I’m expecting you to have everything on hand, but you might not have herbs de provence. This is the secret ingredient to making this herb roasted pork. Seasoned chefs will have this on hand, I’m sure, but the novice cook might not. I only recently discovered this flavorsome seasoning when making my Turkey, Kale, & Brown Rice Soup and now I’m absolutely hooked on it. The flavor is distinct and strong, yet subtle. Herbes de Provence is a mixture of herbs and spices, which generally includes thyme, basil, rosemary, tarragon, savory marjoram, oregano, and bay leaf. All of these delectable seasonings in one seasoning! Amazing!

Cooking The Herb Roasted Pork

Now that you know what goes into making this amazingly tasty dinner, it’s time to go over how to cook it. Again, this is such an easy recipe that it doesn’t take much to prepare. The actual cooking is minimal since you will be relying on the crock pot to do the bulk of the work. Nonetheless, you will need to do some cooking.

First, put the pork in the crock pot. Easy! Next, slice up a medium to large yellow onion and put the slices on top of the roast and around it. Then, you will top the pork roast with garlic and making sure to surround it with the garlic as well. After that, add your chicken broth and wine to the crock pot. Finally, top the roast with the herbs de provence. Set the crock pot to low and cook for 6-8 hours. Within an hour, you will smell a yummy scent filling up your kitchen and will be licking your lips. Unfortunately, you will have to wait another 5-7 hours to dig in to your dinner creation!

Once the pork roast is done, remove the juices and strain them through a wire mesh strainer, into a medium saucepan. Don’t discard those onions! Set them aside so you can serve them on top of your plated pork. Back to the white wine sauce…heat the sauce over medium high heat and bring to a boil. Then turn heat to low and whisk cornstarch into the sauce. Stir constantly until sauce is your desired thickness. If it gets too thick, you can add a little water to thin it or if too thin, continue to add a little cornstarch a little at a time. That’s basically all you do to cook this delicious dinner. Sounds easy? It is. You will be able to master this yummy dish without a problem, I have faith!

Easy Pork Dinner

If you are ready to change up your boring meal plans, add in this tasty herb roasted pork with white wine sauce. It’s an easy recipe and cooks by itself in the crock pot. And, it’s healthy! Equipment

Ingredients

  • 3-4 lb Pork Loin
  • 1 Onion Halved & Sliced
  • 2-3 tbsp Garlic Minced
  • 4 tsp Herbs de Provence
  • 1/2 cup Chicken Broth
  • 1/2 cup White Wine
  • 1 tbsp Cornstarch Or Flour

Instructions

  • Place roast in the crock pot.
  • Cover roast with sliced onions and garlic.
  • Add wine and chicken broth to crock pot.
  • Top with herbs de provence.
  • Cook on low for 6-8 hours or on high for 3 hours (I prefer cooking everything on low. Low & slow!).
  • Once done, remove roast and strain juices through a wire mesh strainer, into a medium saucepan. Set onions aside to add to your serving platter.
  • Heat sauce over medium high heat and bring to a boil.
  • Turn heat to low and whisk in cornstarch to sauce.
  • Stir constantly until sauce is your desired thickness. If it gets too thick, you can add a little water to thin it (1 tbsp at a time).

Marsala Pork Chops

Marsala Pork Chops? I have heard of Chicken Marsala, but Marsala Pork Chops? Interesting! One day, I randomly came across a recipe that consisted of pork chops with marsala sauce and thought, wow, that is definitely different. I had to try it. I mean, I’m obsessed with chicken marsala because of the sweet taste of the marsala wine, especially when it is cooked with garlic and butter. That smooth and tasty sauce is a dish that I can’t get enough of.

But would this be as good with pork chops? I do love pork chops. Typically, I grill them either on the grill or in the broiler (in the cold New England winters – brr!). However, I never thought to cook them with a sauce that I typically make for chicken. Veal marsala is fairly common, but I had never heard of marsala pork chops. Nonetheless, I needed to try it. I added it to my meal plan for the following week so that I could buy all of the ingredients during my weekly food shopping run.

Marsala Ingredients

This recipe is surprisingly easy to make. If you see the list of ingredients, you might be a little overwhelmed at first though. Don’t fret! Read through the ingredients and then read through the recipe instructions. You might want to read through the instructions 2x to get a handle on what it entails. I guarantee after you see what this requires, you will have full confidence in your cooking skills to master these amazingly tasty marsala pork chops!

Whenever I read through new recipes, I immediately get turned off if the list of ingredients is too long. Too long meaning there are 15+ ingredients. To me, recipes that require that many items seem overly complicated. And you know me, I’m all about easy recipes that taste great!

Ingredients

Luckily, these marsala pork chops consist of just a few key ingredients needed to make this scrumptious dinner. Of course, you will need pork chops, marsala wine, mushrooms, garlic, shallots (if you don’t know what a shallot is, just know that you need these in your life, specifically as a staple in your cabinet), butter, chicken broth, flour, some olive oil, and a little salt & pepper. See? Nothing crazy in this recipe! You can handle it, I’m positive!

Here is the full list of what you need:

  • 6 Pork Chops
  • Salt & Pepper Enough to coat pork chops front and back
  • 1/4 cup + 2 tbsp Flour
  • 1.5 cup Marsala Wine
  • 4 tbsp Butter
  • 2 tbsp Olive Oil
  • 10 oz Mushrooms I prefer Baby Bellas, you can use whatever you prefer
  • 1 large Shallot Chopped
  • 1 cup Chicken Broth I prefer fat-free, low sodium chicken broth
  • 2 tbsp Garlic Minced

Instructions

  • Season pork chops on both sides with salt and pepper. Dredge in flour, shaking off excess. 
  • Heat half of the butter and oil in a large skillet over medium-high heat until foaming subsides. Cook pork chops for 3-4 minutes per side, until browned (should read 145 degrees F with a meat thermometer). Very thin chops might need as little as 2 minutes per side.
  • Transfer pork chops to a plate and cover with foil to keep warm.
  • Add shallots, garlic, and mushrooms to pan and sauté until mushrooms are soft and beginning to brown, about 5 minutes. 
  • Stir 2 tablespoons flour into the mushroom mixture and cook for 1 minute.
  • Add half of the marsala wine and cook for an additional 1-2 minutes, scraping any brown bits from the bottom of the pan.
  • Next, add chicken broth and bring to a boil.
  • Add the remaining half of butter and marsala wine to pan then lower heat and simmer for 5-8 minutes, until sauce is slightly thickened.
  • Add pork chops back to the pan and simmer for 1-2 minutes.
  • Transfer pork chops to a platter and spoon sauce over the top.
  • Serve warm with mashed potatoes, rice, or pasta.

Easy Dinner In 30 Minutes

I don’t have endless hours to spend cooking in the kitchen. My reality is that I have 5 little kids who are constantly bugging me about what’s for dinner. While I’m trying to work on dinner, I get the constant, “I’m starving” “When are we going to eat?” “What are we having?” “I’m SO hungry!” And it goes on and on…and on…and on. I’m sure most parents can relate. Needless to say, I want to make dinner quickly and as easy as possible. Plus, the less ingredients, the less mess. Less is more! Which means less ingredients and less mess is definitely better!

There is very little prep work that goes into this dish. The only ingredients to prep are the pork chops and chop up the shallots. Pretty easy, if you ask me. From starting to cook to plating this meal, it should be approximately 30 minutes. And this tastes like something you would get in a nice restaurant. Great meal in 30 minutes or less? Yes! Crock Pot Cowboy Chicken. If you have never heard of Cowboy Caviar, you are probably thinking, what the heck is it? Cowboy Caviar is a dip that consists of peppers, onions, tomatoes, beans, seasonings, and a lite dressing. It is so good and healthy for you. Although Crock Pot Cowboy Chicken isn’t exactly the same as Cowboy Caviar, it’s pretty similar.

Crock Pot Cowboy Chicken consists of healthy ingredients like veggies and beans, and chicken – of course, as well as some flavorful seasonings. Cowboy Chicken Ingredients

  • 2 lbs Boneless Chicken I prefer Chicken Breast, but Thighs are good too
  • 1 jar Salsa Whatever your favorite is! (small jar is best)
  • 1 can Corn Fire roasted is great. You can also do a small bag of frozen corn.
  • 1 can Black Beans

Cowboy Chicken Seasoning

  • 1/2 – 1 tsp Chili Powder Depends on your heat preference
  • 1 tsp Cumin
  • 1-1.5 tsp Cilantro
  • 1 tsp Garlic Powder

Instructions

Making Cowboy Chicken

  • Put all seasoning ingredients in a small bowl and mix well.
  • Cut the fat off the chicken and then put in the crockpot.
  • Top the chicken with the seasoning.
  • Empty the jar of salsa in the crockpot.
  • Drain corn and dump over chicken.
  • Cover and cook on low for 4 hours.
  • Drain and rinse black beans thoroughly, then dump into crockpot.
  • Cover and cook for an additional 1-2 hours.
  • Serve over rice and top with your favorite toppings; sour cream, greek yogurt, cheese, guacamole, etc.

For this Mexican inspired crock pot chicken dinner, you can follow my recipe exactly as written or you can use it as inspiration and come up with your own delicious concoction. Since my recipe is on hand, let’s go over what you will need to get started.

For the crock pot cowboy chicken, it’s obvious that you will need chicken. From there, you will need corn (canned or frozen), black beans, salsa (your favorite salsa would be an amazing choice!), and then some go-to Mexican seasons such as cumin, garlic powder, chili pepper, and cilantro. Egg Salad

Egg salad is the perfect way to eat those Easter eggs for lunch. Did your kids enjoy dying eggs this year? I’m sure they did! And I’m sure they wanted to do multiple eggs in order to try out different egg dying techniques. So much fun! But what the heck are you going to do with all of those eggs now that Easter is over?? Who could possibly want to eat 12 – 24 hard boiled eggs before they go bad? What to do, what to do…I know, you should make egg salad sandwiches! What a GREAT idea for lunches!

Notice how my egg salad (pictured above) is all different colors? It probably looks a little weird. It’s because when we dyed Easter eggs, the food coloring seeped through the shells and dyed the actual eggs! It’s all good though, we used food coloring which is supposed to be used on edible goodies. In the case of this egg salad, it looks a little funky though, but definitely okay to eat. It’s a fun egg salad!

Ingredients Needed

Besides the eggs that you dyed for Easter, you won’t need many other ingredients. And the best part is that you probably already have everything in your cabinet. Therefore, when you get that craving for an egg salad sandwich, you shouldn’t need to run out to the grocery store to get everything.

Here is what you will need:

  • 8 Hard Boiled Eggs Smashed Up
  • 1/2 cup Mayonnaise
  • 3/4 tsp Salt
  • 3/4 tsp Worcestershire Sauce
  • 3/4 tsp Yellow Mustard Any kind is fine – if you like spicy, try dijon. If you like sweet, try honey mustard. I prefer regular yellow mustard for mine.

A Different Lunch Idea

Egg salad is good any time of the year actually. You don’t have to eat it just once a year, you can whip up this sandwich filling any time. The ingredients are minimal. And boiling eggs? It’s pretty easy! You don’t have to be a gourmet cook to make this nutritious lunch, that’s for sure! Easy and delicious meals – those are my favorite!

Oh, and it’s cheap to make. That’s another favorite thing of mine. You could whip up a batch of this in 15 minutes and make enough for a week’s worth of lunches. How great is that? And the cost is next to nothing. I believe it’s less than $2.50 for a dozen white eggs. Add in the cost of the mayo, salt, worcestshire sauce, mustard, bread and you can make lunches for under $6.00 for a WEEK! A week! A cheap lunch idea that is much healthier than fast food and less expensive. It’s a huge win!

Making the Salad

If you know how to boil eggs, you got this! If you don’t know how to boil eggs, you can still make this. Just have to put some eggs in a pot of water and boil the water (with eggs in it). Done! How easy was that? Now, let the eggs cool down – best to do this by putting them in cold water for 10+ minutes. Once cooled, peel the shells. Put the hard boiled eggs in a bowl, smash them. Then add mayo, salt, worcestershire sauce, and mustard and mix thoroughly. Finally, just scoop some of the egg salad onto your favorite bread and your lunch is served. Easy-peasy!

  • Carefully place eggs in pot and cover with water.
  • Turn heat on stove to medium high and bring to a boil.
  • Once water boils, turn heat down to medium low and cook for an additional 8 minutes.
  • When time is up, immediately place boiled eggs in ice water to cool completely. Will take several minutes, but can remain in there as long as you like.

Making Egg Salad

  • Peel hard boiled eggs and place in a medium size bowl.
  • Smash up the eggs.
  • Next, add mayonnaise, salt, worcestershire sauce, and mustard.
  • Mix all ingredients thoroughly so that the eggs are covered with everything.
  • Eat as is or scoop the egg salad onto your favorite bread to make a yummy sandwich.

Making this cinnamon roll french toast bake allows you to be part of the quality time and provide a quality meal that everyone will be thankful for.

Ingredients

  • 2 cans Pillsbury Grand Cinnamon Rolls 17.5 oz cans
  • 1/2 cup Melted Butter
  • 2 eggs
  • 3 tbsp Flour
  • 1/2 cup Half & half
  • 3 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Vanilla Extract
  • 1/2 cup Chopped Pecans Optional

How To Make

As previously mentioned, this recipe can be prepped the night before. Just get everything ready to bake and then cover tightly and refrigerate until you bake it.

Preheat oven to 350 Degrees. Melt butter and coat 9 x 13 baking dish with the melted butter. In a medium bowl, whisk together eggs, cream, flour, cinnamon, nutmeg, and vanilla extract. Open canned cinnamon rolls and slice each roll into 8 slices. Place cinnamon roll pieces into egg mixture and coat thoroughly. Pour the pieces into the greased baking dish and spread evenly. Add remaining egg mixture to the baking dish. Sprinkle with pecans, if using. Bake in oven for 22-28 minutes or until light golden brown. Baking time can vary. Keep an eye on it after 22 minutes. When done, remove from oven. Microwave icing (that came with cinnamon rolls) for 20 seconds. Pour icing over cinnamon roll french toast bake, covering well. Serve warm and enjoy that tasty goodness of cinnamon rolls in a french toast version.

Cinnamon Roll French Toast is an easy recipe because the Pillsbury Cinnamon Rolls add most of the recipe and all you need to do is slice those up! The rest is easy-peasy as far as baking goes. Just add some cinnamon, nutmeg, vanilla extract, cream, and eggs. Then bake and enjoy. No need to add butter or syrup, but feel free to add it if you prefer. If you keep an eye on your french toast bake ane make sure it’s not over-cooked, this will be a gooey, cinnamon-y french toast that doesn’t need anything added (except the cinnamon roll icing, of course!). I prefer to add chopped pecans or walnuts to the top before cooking. Yes, it adds some additional flavor from your favorite nuts, but it also provides a crunchy texture which is great, when you are chewing this chewy and delectable breakfast!

Cheesecake Cookie Cups

Cheesecake cookie cups sound interesting, don’t you think? Any by interesting, I mean they sound absolutely delicious and I need to try one immediately! Making a cheesecake might sound overwhelming if you aren’t a skilled baker, however, I want to let you in on a secret. These cheesecake cookie cups are amazingly easy to make. And, they taste SO GOOD!

Ingredients Needed

These cheesecake cookie cups don’t require many ingredients. Well, that assumes that you are using a chocolate chip cookie dough roll. If that’s the case, this is all that you will need:

  • 16 oz Chocolate Chip Cookie Dough Pillsbury is preferred
  • 8 oz Cream Cheese Softened
  • 1/4 cup Sugar
  • 1 tsp Vanilla Extract
  • 4 oz Whipped Topping Cool Whip or Any Version of it

If you don’t have a cookie dough roll, of course, you can make your own cookie dough and use that for this recipe as well. Honestly, I am all about making homemade treats, but when it comes to this yummy recipe, I’m all about super easy! I specifically buy the cookie dough for this recipe. Normally, I don’t buy cookie dough. Rather, I make my own, when I bake cookies. However, having pre-made cookie dough is a huge time saver for this recipe and nobody will know the difference.

Easy To Make

The first time I made cheesecake cookie cups, it was Easter. We were going to my parents’ house for dinner that evening, but I hadn’t decided what to bring for dessert as of Easter morning! I checked my refrigerator and baking ingredients to see what I had available. Luckily, I had some Pillsbury refrigerated chocolate chip cookie dough available – score! Additionally, I had cool whip as well as cream cheese. That worked out perfectly because those are pretty much all the ingredients needed for this delectable dessert.

Basically, just bake the cookie dough in a muffin tin so make the cookie cups. Once done, push slightly down in the middle to form an indentation that will all the cheesecake filling a spot to sit. After the cookie cups have cooled, remove them from the pan. Next, pipe the cheesecake filling into each cup. Finally, drizzle each cheesecake cookie cup with some chocolate sauce and/or caramel sauce.

I whipped up this dessert in less than 30 minutes, including cleanup! They looked delicious. I couldn’t wait to eat one of those later that night.

  • Roll the cookie dough into 1-inch balls and place them in a greased muffin pan.
  • Using your hands or a shaped tool, press the dough balls down so they form a cup shape.
  • Bake for 10-15 minutes.

Cheesecake Filling

  • In a medium bowl, whisk together the softened cream cheese, sugar, and vanilla until smooth and no lumps remain.
  • Fold in the whipped topping.
  • Scoop the cheesecake filling into a piping bag or a plastic sandwich bag.
  • Once the cookie cups have baked and cooled, remove them from the muffin tin.

Putting It Together

  • Pipe the cheesecake filling into each cup.
  • Serve with chocolate syrup and/or caramel syrup.

Family Favorite

Needless to say, everyone loved these cookie cups. Sadly, there were no leftovers. The crispiness of the cookie cupcake is delightful. And the cheesecake filling is to die for! No need to spend hours baking a cheesecake, you can make this dessert quickly and get the same effect, mouthwatering, creamy, goodness.

When To Enjoy

As previously mentioned, I originally made this to bring as an Easter dessert. After realizing how easy this holiday dessert is to make and how yummy everyone thought they were, I have made these countless times. You don’t need a special occasion to make this dessert, but you can certainly bake this simple dessert for holidays or other family functions. Nobody will criticize you for choosing an easy recipe because they will be too busy stuffing their mouths with these!
