Ground Turkey Stuffed Peppers

Ground Turkey Stuffed Peppers is something I was dying to make. The complete meal all served in a bell pepper seemed intriguing and fun! However, for one reason or another, I just never got around to making them. Too many yummy dinners and not enough time, I guess!

Mistakenly, I had forgotten to take something out of the freezer the night before and I found myself scrambling to figure out an easy dinner one morning. Since ground turkey defrosts quickly, I figured I would make something using that. After seeing some colorful red and yellow bell peppers in my refrigerator, I was determined to make ground turkey stuffed peppers. I had bought the peppers to make Cowboy Caviar, however, I decided to put that on hold for the time being because I needed to make this stuffed pepper dinner that night. Finally!

Ingredients Needed

Luckily, making ground turkey stuffed peppers is not only an easy dinner to make, but you most likely will have all of the ingredients in your cabinet and refrigerator to make this, even if it’s a last minute decision.

Here is what you will need:

Ground Turkey Mixture

  • 2 tbsp Olive Oil
  • 1 Shallot chopped
  • 1 tbsp Garlic minced
  • 2 lbs Ground Turkey
  • 3 Bell Peppers any color is fine – deseeded and cut in half
  • 2 tbsp Herbs de Provence
  • 1/2 pkg Sundried Tomatoes chopped
  • 1 cup Mozzarella Cheese

Quinoa

  • 1 box Roasted Red Pepper Quinoa Near East
  • 1 tbsp Olive Oil

Making The Stuffed Pepper Dinner

Ground turkey stuffed peppers are easy to make. There are a few steps to make this delicious and healthy dinner, but they can be done parallel to each other, thus, feeling like it’s more of a 2-step process. Once the peppers have slightly softened, the quinoa is ready, and the turkey mixture is cooked, all that is left is to stuff the peppers and bake. It’s a fairly easy recipe that any novice chef can prepare.

Cooking The Peppers

  • Preheat oven to 350 degrees F.
  • Cut bell peppers in half and de-seed each one.
  • Lightly spray 9 x 13 pan with cooking spray.
  • Place bell peppers open side up in pan.
  • Cook in oven for approx 15 minutes while the turkey and quinoa is cooking.

Cooking The Quinoa

  • Follow the steps on the quinoa box.

If you prefer to make your own quinoa, that is perfectly fine. I love roasted red pepper and basil quinoa by Near East. I thought the flavor of the quinoa seasoning would pair well with the herbs de provence. And since I had that quinoa in my cabinet, it was a no-brainer for choosing this.

You could also skip the quinoa and add rice. White or brown rice would be a great choice to add to the ground turkey stuffed peppers. Since brown rice is thought to be healthier than white rice, you might want to choose that type of rice to make this dinner extra healthy. It’s up to you!

Ground Turkey Mixture

  • Heat olive oil for 1 – 2 minutes.
  • Put garlic and shallots to pan and cook for 2-3 minutes so the garlic browns a bit and the shallots soften.
  • Add ground turkey to the pan and cook until it’s brown. Mix it up throughout cooking process. Should take 8-10 minutes to cook.
  • Once the quinoa and turkey are cooked, mix them together.
  • Then add the chopped sundried tomatoes and herbs de provence and mix well.
  • Take the bell peppers out of the oven (they should be somewhat soft, but not mushy). Fill each one with the turkey/quinoa mixture.
  • Cook for 20 minutes.
  • Take pan out and top each bell pepper with mozzarella cheese.
  • Cook for 10 more minutes.

Healthy Dinner

If you are looking to eat healthy, but don’t want to sacrifice a good tasting, flavorful meal, cooking with the right ingredients will really help. Not all unhealthy food tastes good. Conversely, not all healthy food tastes bad. You can have healthy food that tastes great!

Choosing ingredients such as low fat, ground turkey will be a healthier alternative to a fatty cheeseburger. We know this. However, however, is ground turkey a suitable choice for ground beef all the time? Maybe not. However, if you opt for ground turkey more often than not, splurging on a juicy cheeseburger shouldn’t be a problem here and there!

These ground turkey stuffed peppers have plenty of flavor and it doesn’t add unnecessary fat and calories. The turkey is lean – yay! The quinoa is healthy and savory. Additionally, the seasonings such as the herb de provence pack an incredible amount of flavor that is doesn’t tip the healthy meter to unhealthy. You can feel guilt free having 2 of these stuffed peppers. So go ahead, have seconds and don’t give it a second thought!
