Crock Pot Mango Pork Loin is for everyone. Every kid loves sweet things. Heck, most adults do too! This crock pot dinner is so easy and so good, nobody will suspect that you threw it together in less than 5 minutes. Set up dinner in the morning and go about your day. Later on (when you are starving), you don’t have to worry about what to make for dinner.

I hate planning dinners. I get bored with our regular, go-to meals. So one day, I reached out to my Facebook friends to see if they can help with meal inspiration. A friend of mine said to cook pork with salsa in the crockpot. It sounded easy enough. I tried it.

Easy Crock Pot Dinner

Since I was looking for easy recipes that tasted good, I made the crock pot mango pork loin. This delicious pork dinner was beyond easy to make. There are 2 steps, that’s it. And all you do is; 1. put pork in the crock pot and 2. put the mango salsa over the pork. That’s it! Later in the day, that sweet smell of mango pork will take over your house and have your mouth watering! Before you know it, dinner will be ready. You will find it to be super easy to make, but so tasty! This easy dinner has become a staple in my house. Believe me, it will also be a staple recipe in your household too. You need to try this pork loin recipe! Try it this week. Heck, try it tonight!

How amazing is this list of ingredients? I mean, you only need two things to make this yummy dinner. Here’s what you will need:

  • 3-4 pounds Pork Loin
  • 1 jar Mango Salsa (we love Newman’s Own)

Instructions

  • Put pork loin in crock pot.
  • Cover with mango salsa.
  • Cook on low for 6-8 hours.
  • Serve with rice.

How To Make Mango Pork

I don’t have a lot of free time so I have to be efficient with my time. A time saving tip is to cook white or brown rice about 20min before dinner is ready. An even better time saving tip is to make the rice in the microwave in the morning. Put the microwave on a low setting (like 5 or 6 temp-wise) and cook the rice for 15 min, stir/check, and continue cooking for another 5-7 minutes.

Of course, while the rice is cooking, you will be slaving, ahem, I mean prepping the pork loin in the crockpot, cleaning up the breakfast mess, brushing someone’s hair, filling water bottles, and yelling at kids to hurry up because the bus will be here any minute! The actual meal prep takes less time than trying to get that darn cover off the salsa container.

Next thing you know, the rice will be done and dinner will be cooking. You will be done for the next 6-8 hours. Go to work or better yet, go sneak a pedicure in – you deserve it (and your feet need it!). Basically, just go about your day. When you arrive home later, you’ll walk into a sweet smelling mango pork loin aroma. All that will be left to do is to set the table! The best part is that everyone will enjoy this yummy dinner that took you 5 minutes to pull together.
