Delicious Cannoli Pancakes Make The BEST Breakfast

Cannoli Pancakes are my new favorite way to enjoy pancakes! I mean, who wouldn’t want a fluffy chocolate chip pancake that is filled with a creamy, ricotta filling? I certainly can’t think of anyone who wouldn’t like this. Hold the syrup because you don’t need it for these dessert-like pancakes! These yummy pancakes are sweet inside and out!

Of course one of the best parts of the cannoli pancakes is the cannoli filling. That’s a given. However, the fluffiness of the pancakes makes a HUGE difference in presentation and taste. Having a fluffy pancake allows for the pancake to fold over to resemble a cannoli. If your pancakes are thin or stiff, it will be extremely difficult to fold them over and have them stay. You need to have them folded in order to really experience these cannoli pancakes after all and that’s where the taste becomes a huge factor!

Fluffier Pancake

You could just follow the recipe for the cannoli filling and stuff any regular pancake. And you would be fine. In fact, you would be satisfied from eating a yummy breakfast like that. However, if you are making pancakes, wouldn’t you prefer a light and fluffy one that tastes delicious? If you are like me, then, yes, that’s the constant challenge. I’m sharing with you an amazing recipe that brings pancakes like that to existence!

One trick is to add some white vinegar to your milk to ‘sour’ it up. It will need to sit for a good 10 minutes. Don’t worry, you won’t be eating sour milk pancakes. You won’t get sick and you certainly won’t taste the sourness of the vinegar. You will see some bubbling with the milk from the vinegar and that’s where the magic happens!

Another trick to making fluffy pancakes is not over mixing the wet and dry ingredients. Yes, you need to mix them thoroughly so that there are no dry spots in the pancake mixture. However, once you mix everything together, put the whisk down. I repeat, put the whisk down! And let the mixture to sit for a good 10 minutes. Overly mixing the batter will make it watery, you want the batter to be on the thicker side so that it can cook in a fluffy way – the result will be fluffier pancakes!

Pancakes!

One of the best things about making pancakes is that they cook quickly! One of the annoying things about making pancakes is that they cook quickly! The reason I say it can be annoying is that when you are cooking for a big group (like my house!), you have to make 30 pancakes to feed everyone. And, honestly, if my kids had their way, they would want me to make 50 pancakes. They have the biggest appetites when it comes to desserts or dessert-like foods, it’s borderline ridiculous.

Cooking The Pancakes

Thankfully, pancakes only take a few minutes to cook so even if I do make 30 pancakes with my super duper griddle for large families, I don’t have to slave over the stove for very long. And I just make sure to give the kids the first cooked pancakes so that I can enjoy the ones towards the end that are still warm. Ha, who am I kidding, by the time I get them all their plated breakfasts my pancakes will be cold…just like every other meal I eat!

When making the cannoli pancakes, spoon a small circle of batter on to a lightly greased frying pan or griddle over medium heat. Make sure the heat isn’t too high. You don’t want burnt pancakes. As the batter begins to cook, add a a few mini chocolate chips to each pancake. Let the pancakes cook for a couple of minutes. Don’t get overzealous and try to flip them too soon. I am guilty of that sometimes and then I yell at myself! Wait for bubbles to form in the pancakes and then give it another 10 – 20 more seconds (to be sure that they are ready) and then using a spatula, flip each pancake. Once flipped, give them a few more minutes of cooking time before setting them aside on a warm plate. Repeat the process until the cannoli pancake batter has been cooked completely.

Making The Cannoli Dip

If you have ever made homemade whipped cream, you won’t have a problem with making the canoli dip for the chocolate chip canoli pancakes. You will need:

  • Heavy Cream
  • Powdered Sugar
  • Cinnamon
  • Nutmeg
  • Ricotta Cheese
  • Mini Chocolate Chips

Add the heavy cream, powdered sugar, cinnamon, and nutmeg to a bowl and with a hand mixer, mix ingredients until they form stiff peaks (just like making whipped cream). Next, by hand, add in the ricotta cheese and mini chocolate chips so that they are fully incorporated in the creamy filling. It takes about 5 minutes and it’s that easy. For such a yummy recipe, it sure is easy to make!

Creating A Masterpiece

So you have mastered the cannoli filling. That was really easy. And you made the fluffiest pancakes ever which has you patting yourself on your back and rightly so. Now, comes the moment of truth. Combining the chocolate chip canoli pancakes with the canoli filling. Is your mouth watering? Mine is!

Put the chocolate chip side face down on a plate. Spoon on some cannoli filling to one half of a pancake. Then, fold over the non-filling side so that it resembles a yummy taco-like shell. This is how you make a cannoli pancake! Congratulations, you perfected this and what a masterpiece you created. All that is left is to dig in and E-A-T! You could dust some powdered sugar on top to make it look extraordinarily delicious! As you can see from my pictures, I did not do that. No time! I needed to eat! Maybe next time…

Ingredients

Fluffy Pancakes

  • 3 cups Milk
  • 8 tbsp White Vinegar
  • 4 cups Flour
  • 8 tbsp Sugar
  • 4 tsp Baking Powder
  • 1 tsp Salt
  • 4 Eggs
  • 8 tbsp Butter melted
  • 4 tsp Vanilla Extract
  • 1 cup Mini Chocolate Chips

Canoli Filling

  • 2 cups Heavy Cream
  • 1/3 cup Powdered Sugar
  • 1 tsp Cinnamon
  • 1 pinch Nutmeg
  • 1 cup Ricotta Cheese
  • 1.5 cups Mini Chocolate Chips

Instructions

Making The Cannoli Filling

  • In a large bowl using a hand mixer, beat together heavy cream, powdered sugar, cinnamon, and nutmeg until stiff peaks form.
  • Fold in riccotta cheese and mini chocolate chips. Set aside until pancakes are cooked.

Fluffy Chocolate Chip Pancakes

  • Combine milk and vinegar and stir lightly to mix. Let sit for 10 minutes to "sour". This will not actually taste sour, it's to help with the fluffiness!
  • Combine the dry ingredients in a large bowl and mix together.
  • In a smaller bowl, whisk the "soured" milk, eggs, vanilla, and melted butter together.
  • Pour wet ingredients into the dry ingredients and whisk together until most of the lumps are gone. Do not overmix. The batter will be thick, don't add any more liquid. Let the batter sit undisturbed for 10 minutes. Do not stir at all.
  • Gently spoon out the batter onto a lightly greased frying pan or griddle.
  • Add a few mini choc chips to each pancake as they are cooking.
  • Cook until bubbles appear on the pancakes and then flip with a spatula to lightly brown the other side. I did not add chocolate chips to both sides of the pancakes, just one side for effect +the cannoli filling has them in them!
  • Once pancakes are cooked, spread some cannoli filling on one half (non-choc chip side) of the pancake and gently fold the pancake over to create the cannoli "shell".
  • ENJOY!

Two Ingredient Bagels That Are Healthy And Weight Watchers Approved

Two Ingredient Bagels sounded pretty interesting to me. I first heard of them during the beginning stages of the Covid19 lockdown days. A woman in a Facebook group mentioned how to make the 2 ingredient dough in lieu of regular dough since it sold out at the grocery stores.

What Two Ingredients?

Just two ingredients is all it takes to make these bagels which have been also referred to as Weight Watchers Two Ingredient Bagels. So what are these magical ingredients? Wait for it…Plain Greek Yogurt and Self Rising Flour. Can you believe that? And you can use the non-fat plain greek yogurt making these an incredibly healthy bagel! No wonder Weight Watchers endorses this recipe!

Self Rising vs All Purpose Flour

Again, when making the two ingredient bagels you only need flour and yogurt, specifically self rising flour. What is the difference between self rising flour and all purpose flour?

All purpose flour does not rise unless you add a leavening agent such as baking powder. Self rising flour already contains baking powder as well as salt. And as the name implies, it allows the dough to rise on it’s own. Nothing more is needed to assist with that.

If you don’t have self-rising flour, you can use ‘regular’ flour so don’t worry about that. A good adjustment to regular flour is to add a small pinch of salt as well as 1.5 teaspoons of baking powder to each cup of flour in your recipe. The baking powder will assist in the dough rising, the salt has nothing to do with that. The salt is purely for taste so depending on your preference, you can eliminate it altogether or add more than just a pinch.

Making The Dough

This is one of the easiest recipes you will find, especially when making dough. Just measure the ingredients (all two of them!), combine them in a bowl, and then mix them thoroughly. That is basically it! You will need to put some muscle into it and knead the dough. Believe it or not, the yogurt and flour will make a dough. It seems as though it would make a mushy mess, but I can assure you that the more you mix and knead the ingredients, the more it will begin to resemble dough. Amazing!

Making The Bagels

Now that the dough is done, you just need to shape it into bagel shapes. I’m sure you know what that looks like even without a picture. The easiest way to do this is to separate the ball of dough into 8 equal parts. Next, roll each part in the palm of your hand so that it looks like a ball. Then, using your thumb, push through the middle of the dough while pulling the sides to create that bagel-like (or doughnut-like) shape. It doesn’t take long so making these bagels will be quick and easy. Amazing!

Baking The Bagels

Once the bagels have formed, just brush them with an egg wash so that they get that golden color on top. If you don’t have an egg, it is not a problem, the egg is only for aesthetic reasons, it doesn’t really add much in terms of flavor. The egg does make the dough look a little nicer because it will brown the tops of the bagels rather than having them stark white – again, purely aesthetics. Adding a little salt to the tops would be a great addition, however. Too much salt is never a good thing, but using it in moderation is a beautiful thing.

Now that everything is ready to go, just put the two ingredient bagels in the oven and they will be ready in 20 to 25 minutes. Don’t walk away completely though, you will need to turn the bagels halfway through to ensure that they bake evenly.

When the bagels look done, take them out of the oven. Turn the heat up and then pop them back in the oven for 3 to 4 more minutes to get them that golden brown color that you want. That’s it! Sounds pretty easy? It is!

Cut into your bagels and spread your favorite cream cheese, butter, or jams. Or you can eat them as-is. Warm bagels don’t need a lot of extras!

Two Ingredient Bagels

Two Ingredient Bagels are SO EASY to make, just need nonfat greek yogurt and self rising flour!

Ingredients

Bagel Dough

  • 2 cups Self Rising Flour
  • 2 cups Non Fat Plain Greek Yogurt
  • *3 tsp Baking Powder *If you don't have Self Rising Flour*

Bagel Toppings

  • 1 Egg
  • pinch Salt
  • 1 tsp Water
  • Any seasoning you prefer, if you want

Instructions

  • Preheat oven to 375 degrees F.
  • Place parchment paper on a baking sheet and lightly coat with cooking spray.
  • In a large bowl, combine flour (and baking powder, if using) and yogurt until the mixture clumps to ball of dough.
  • Dump mixture onto a lightly floured work surface and knead the dough by hand until the dough is smooth and elastic (approx 5 min). Dust with add'l flour as needed if the dough is too sticky.
  • Divide the dough into 8 equal parts and shape each portion of the dough into a ball.
  • Use your thumbs to make a hole in the center of each ball. Gently pull and stretch until the dough is a uniform ring. Repeat with remaining dough balls. *Flour your hands as needed, if too sticky to handle.
  • Arrange the shaped bagels on the prepared baking sheet.
  • Mix together the egg wash by whisking the egg, salt, and water in a small bowl until smooth.
  • Brush the egg wash mixture over the bagels. Sprinkle desire toppings if desired (additional season, such as everything bagel, ranch, parm cheese, etc).
  • Bake for 20 to 22 minutes, rotating the baking sheet halfway through.
  • Remove from oven. Increase oven temp to 450 degrees F.
  • Return baking sheet to oven and bake for an additional 3 to 4 minutes until the tops of the bagels have browned.
  • Remove from oven and let cool.
  • ENJOY!

Nutella Pop Tarts

Nutella Pop Tarts sounds like an amazing combination, doesn’t it? I mean, who doesn’t love the creamy taste of nutella? And Pop Tarts are a tasty treat as well. Now picture biting into that creamy, chocolate, hazelnut taste inside of a crispy pastry. Yum!

Making home made pop tarts and combining those two things has to be incredible! The soft crust with warm nutella sounds like an incredibly yummy snack that you could have for dessert or possibly breakfast from time to time!

Pop Tarts

If you haven’t heard of pop tarts before, they are a flat rectangular toaster pastry with a sugary filling sealed inside two layers of rectangular, thin pastry crust. I loved pop tarts, when I was growing up. These weren’t something we ate often. So when my mom did buy pop tarts, I was SO EXCITED! My favorite flavor was the frosted raspberry ones. If you have read any of my blog posts, you will notice that I’m a huge fan of raspberry, in general! Especially raspberry martinis, aka French Martinis. Mmm, mmm! But I digress. Back to the pop tarts. They are typically considered a breakfast snack and come in a variety of flavors. You could put almost any flavor inside a homemade pop tart. For my first attempt, I went with a Nutella filling and, thus, the Nutella Pop Tart recipe was created.

Nutella

Nutella is a sweetened hazelnut cocoa spread. It’s basically a spreadable candy bar which is why it is so loved by everyone! You can add it to some bread and have a hazelnut sandwich – so good! Adding nutella to a home made pop tart just sounds like the right thing to do! When you bake the pop tarts, the nutella gets warm and gooey inside the fresh and crispy crust. Can’t you just taste it?

Making The Nutella Pop Tarts

These nutella pop tarts are super easy to make and is an awesome breakfast snack for you or your kids. I’ve made these for my entire family and everyone from age 46 down to age 2 loved them! You only need a few ingredients to bake these yummy snacks and are much tastier than the original, store bought treats. You will look like a professional baker, when you whip these up for your guests and you don’t have to have an extensive baking background. This is a very basic recipe that is easy to follow and difficult to screw up. Are you in?

There are two main ingredients, are you ready? Store bought refrigerated pie crusts and Nutella. Basically, you just put together easily accessible ingredients and bake. Then, you dress up the nutella pop tarts by adding icing to the top with some sprinkles or as we Bostonians call them, jimmies! That’s really it! And boy oh boy are these delicious. For such an easy recipe, you will be surprised at how tasty these are. Add some Pillsbury pie crusts and nutella to your shopping list (if you don’t have some on hand already) and get baking!

My family is obsessed with these breakfasts and as a result, they eat A LOT. I get stressed out when making these dishes because by the time I make enough for everyone, the 1st round of pancakes, waffles, and french toast have already cooled. Wah!

Classic Breakfast Alternative

Because cooking french toast can leave some family members eating cold french toast, a yummy alternative is to bake a big enough batch at the same time. Sounds genius right? It is! Since it cooks at the same time, it’s ready at the same time. Which means everyone can eat a warm breakfast. At the same time!

This french toast casserole makes it easier for you to serve your hungry family a yummy cinnamon french toast and be able to serve it warm! You can even prepare this casserole bake the night before and won’t sacrifice the consistency or taste. Then, you can just pop it in the oven in the morning. This is perfect for holiday breakfasts like Christmas, Easter, Mother’s Day, Father’s Day, etc! There is enough going on in the mornings on holidays, nobody wants to be stuck in the kitchen making breakfast. You want to enjoy your family time. Making this cinnamon roll french toast bake allows you to be part of the quality time and provide a quality meal that everyone will be thankful for.

Ingredients

  • 2 cans Pillsbury Grand Cinnamon Rolls 17.5 oz cans
  • 1/2 cup Melted Butter
  • 2 eggs

Add remaining egg mixture to the baking dish. Sprinkle with pecans, if using. Bake in oven for 22-28 minutes or until light golden brown. Baking time can vary. Keep an eye on it after 22 minutes. When done, remove from oven. Microwave icing (that came with cinnamon rolls) for 20 seconds. Pour icing over cinnamon roll french toast bake, covering well. Serve warm and enjoy that tasty goodness of cinnamon rolls in a french toast version.

Easy Recipe & Tastes Great!

Cinnamon Roll French Toast is an easy recipe because the Pillsbury Cinnamon Rolls add most of the recipe and all you need to do is slice those up! The rest is easy-peasy as far as baking goes. Just add some cinnamon, nutmeg, vanilla extract, cream, and eggs. Then bake and enjoy. No need to add butter or syrup, but feel free to add it if you prefer. If you keep an eye on your french toast bake ane make sure it’s not over-cooked, this will be a gooey, cinnamon-y french toast that doesn’t need anything added (except the cinnamon roll icing, of course!). I prefer to add chopped pecans or walnuts to the top before cooking. Yes, it adds some additional flavor from your favorite nuts, but it also provides a crunchy texture which is great, when you are chewing this chewy and delectable breakfast!

This satisfying breakfast is hearty and the ultimate breakfast comfort food. We all know this is not a dish that is going to be promoted by Weight Watchers, but does that really matter? Not if you eat it in moderation. You can’t survive off of rice cakes and fruit every day…okay, maybe you can, but you wouldn’t be happy – let’s just agree on that!

Sausage and biscuits consists of biscuits, sausages, then more biscuits! Every bite is loaded with some kind of pleasurable ingredient. No need to sift through the pan, you can’t go wrong with your serving.

Easy to Make

Not only is this dish delicious, it is very easy to make. And there are minimal ingredients needed to cook this family favorite. You will need sausage, biscuits, flour, milk, garlic powder, salt, and pepper. That’s it! For a breakfast that packs so much flavor, it’s amazing that there are so little ingredients. You could add some melted butter to the top layer of biscuits, but it’s not necessary. You could opt for I Can’t Believe It’s Not Butter Light spray and spray the tops of the biscuits to give them a golden hue.

What I really love about this recipe is that you can cook 2 different steps at the same time. For instance, as the 1st biscuit layer cooks, you can cook the sausage and gravy. Then, when the biscuits are done, you can add the sausage/gravy mixture to the pan, then top with the final layer of biscuits. And then as the entire meal cooks together, you can clean up and get ready to dig in!

Ingredients

  • 2 cans Flaky Biscuits 16 oz cans
  • 1 lb Breakfast Sausage
  • 1/2 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 4 tbsp Flour
  • 3 cups Milk
  • 2 tbsp Melted Butter

Instructions

  • Preheat oven to 400° F.

  • Cut each biscuit into quarters and set aside.
  • Spray cooking spray into a 9 x 13 pan.
  • Layer half of the quarters in prepared pan.
  • Bake for 10 minutes.
  • While biscuits are cooking, brown the sausage over a medium/high heat until cook through.

  • Reduce heat to medium.
  • In a small bowl, mix together flour, salt, pepper and garlic powder.
  • Sprinkle the cooked sausage with flour mixture and stir mixture until completely absorbed.
  • Next, add in milk and stir to combine.
  • Stir frequently until mixture comes to a simmer.
  • Reduce heat to low and continue to simmer and stir until gravy has started to thicken, (about 5 mins).
  • Pour gravy over your bottom layer of cooked biscuits.
  • Layer the remaining uncooked, biscuit pieces over the gravy.
  • Bake for 15-20 minutes or until biscuits are golden brown.
  • If you would like, brush 1-2 Tablespoons of melted butter over the tops of the biscuits to give them an inviting shine.
  • Let cool for a few minutes.
  • Enjoy!

Easter of 2019, I was hosting a brunch at my house to celebrate the holiday. I have hosted holidays in the past and enjoy cooking holiday meals, but I had never hosted a brunch. Eek! What was I going to make? Eggs? Pancakes? I figured you couldn’t go wrong with those dishes, but it didn’t seem holiday cuisine.

I wanted to serve delicious dishes that were a little out of the ordinary, but relatively easy to make. While reading through numerous recipes that focused on brunch dishes, I came across one that sounded really good. Lemon blueberry french toast bake. Mmm, mmm! Not only did this dish make my mouth water, it looked pretty easy to make. However, would this be as easy as I thought?

Easy To Make

Yes, this is an easy brunch to make! There isn’t much cooking involved, it mostly needs preparation. And the prep work for this dish is pretty straightforward. Cut up the Hawaiian rolls into cubes. Then alternating layers of bread and blueberries, and ending with bread on top. Next you whisk together the wet ingredients of eggs, milk, vanilla, cinnamon, nutmeg, maple syrup, and lemon zest. Once mixed well, you pour the mixture over the bread/blueberry casserole. Cover tightly and refrigerate for 2 hours or overnight. Prepping it the night before gives you the luxury of sleeping in and just popping the pan in the oven in the morning. And then you can drink your coffee while sitting back and waiting for that yummy – goodness to be ready!

End Result

The lemon blueberry french toast bake was a hit at my house on Easter! Everyone loved it. And depending on your love of lemons, you could always add more or less. In my house, we really enjoy the sour lemony taste with the sweet blueberries, such a great combination.

In conclusion, this is a kid and adult friendly. I have made this dish for breakfast on regular weekend mornings and it always goes quickly!

  • 1 pkg Kings Hawaiian Sweet Rolls 12ct package
  • 1 cup Blueberries
  • 1.5 cups Milk
  • 3 lg Eggs
  • 2 tbsp Maple Syrup
  • 1 lemon Zest
  • 1.5 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg

Crump Topping

  • 1/4 cup Flour
  • 1/4 cup Brown Sugar
  • 1/2 tsp Cinnamon
  • 1/4 cup Butter Cut into small cubes
  • 2 tbsp Confectioners Sugar

Instructions

  • Spray a 9×13 pan with nonstick spray.

  • Cut hawaiian rolls into small cubes.
  • Place a layer of bread cubes evenly into the pan.
  • Top with blueberries in an even layer.
  • Repeat layering bread cubes and blueberries 2 more times and end with a layer of bread on top.
  • In a large bowl, whisk together milk, eggs, maple syrup, lemon zest, vanilla, cinnamon and nutmeg.
  • Pour mixture evenly over the bread cubes.
  • Cover and place in the refrigerator for at least 2 hours or overnight.
  • Preheat oven to 350 degrees F.

Crumb Topping

  • In a small bowl, combine flour, sugar and cinnamon.
  • Using your fingers, work the butter into the dry ingredients until it resembles coarse crumbs.
  • Sprinkle the crumb topping evenly over the bread cubes.
  • Bake for 35-45 minutes, or until golden brown.
  • Serve immediately, sprinkled with confectioners’ sugar, if desired.
