Ingredients

  • 2 lbs Chicken Boneless
  • 14.5 oz Diced Tomatoes
  • 1 Onion Diced
  • 2 tbsp Garlic Minced
  • 1 tbsp Chili Powder
  • 2 tsp Cumin
  • 1 tsp Paprika
  • 32 oz Low Sodium Chicken Broth
  • 14.5 oz Black Beans Drained and Rinsed
  • 1.5 cups Frozen Corn Or 1 can of corn (drained)
  • 1 tbsp Lime Juice
  • 1/4 cup Cilantro

Instructions

  • Place chicken breasts in crock pot.
  • Next, add onion, garlic, chili powder, cumin, paprika, coriander and season with salt and pepper to taste.
  • Then, pour chicken broth and diced tomatoes into a slow cooker.
  • Cover with lid and cook on LOW for 5-6 hours, or until chicken is cooked through.
  • Remove chicken and shred, then return to slow cooker along with black beans, corn, cilantro and lime juice, stir. Cook until heated through for approx 15 - 20 minutes
  • Top with tortilla chips, sour cream (or non fat Greek yogurt) cheese, etc.
