Ingredients
2lbsChickenBoneless
14.5ozDiced Tomatoes
1Onion Diced
2tbspGarlicMinced
1tbspChili Powder
2tspCumin
1tspPaprika
32ozLow Sodium Chicken Broth
14.5ozBlack BeansDrained and Rinsed
1.5cupsFrozen CornOr 1 can of corn (drained)
1tbspLime Juice
1/4 cupCilantro
Instructions
Place chicken breasts in crock pot.
Next, add onion, garlic, chili powder, cumin, paprika, coriander and season with salt and pepper to taste.
Then, pour chicken broth and diced tomatoes into a slow cooker.
Cover with lid and cook on LOW for 5-6 hours, or until chicken is cooked through.
Remove chicken and shred, then return to slow cooker along with black beans, corn, cilantro and lime juice, stir. Cook until heated through for approx 15 - 20 minutes
Top with tortilla chips, sour cream (or non fat Greek yogurt) cheese, etc.
