Walnut Cranberry Chicken Salad is the perfect dish that you can enjoy as a lunch, dinner, or even a snack.   • 1 cup Craisins chopped
  • 1 cup Walnuts chopped

The beauty of this recipe is that you can customize it to whatever your favorite ingredients are. Perhaps you enjoy the recipe as it stands, but you don’t have certain add-ins. You can make some substitutions with raisins instead of craisins, or chopped apples or grapes. Further, you could switch up almonds instead of walnuts. There is no right or wrong here, just yummy tasting food!

How To Make

  • Cut up all chicken, celery, and walnuts.
  • Add chicken, celery, walnuts, and mayonnaise to a large bowl and mix well.

Cowboy Caviar sounds like a strange name. What is it exactly? Basically it is a healthy dip full of black beans, black eyed peas, bell peppers, purple onions, tomatoes, and cilanto in a light vinagrette dressing. It’s kind of an oxymoron though. The cowboy part tells us that this is nothing fancy, however, the caviar description means that the nothing fancy IS, in fact, fancy! I can tell you firsthand that this is delicious!

Cowboy Caviar can be classified as a dip or salsa. It is loaded with healthy ingredients such as black beans, peppers, black eyed peas, purple onion, etc etc etc. You really could add/subtract whatever you want and make it spicy or keep it mild, you can tweak it to include whatever ingredients you want. To keep things simple, let’s stick with the recipe I know and love, shall we?

When To Serve

Cowboy caviar is a favorite among kids and adults. The recipe makes a huge batch, but you know what is crazy? At a family party, there are never leftovers! And if I make it just because for my family, it only lasts a day or two. It’s crazy how much everyone enjoys this healthy salsa. It’s great though.

I love making this for parties because it is a great appetizer that pairs well with Tostitos, especially Tostitos Hint Of Lime. The tangy lime chip really brings this salsa an extraordinary level.

I also love making this salsa for my family as a side dish to our dinners. You can serve this in place of a pasta salad and save the carbs for something else, maybe a yummy dessert such as a Cheesecake Cookie Cup. Sounds like an idea! Or you could pair cowboy caviar with homemade cheeseburgers. Skipping the fries and adding some veggies to your kids’ plates. And they will be happy about that! Did you think skipping french fries could be a good thing in their minds? It can!

Easy To Make

Cowboy Caviar is super easy to make. There is NO COOKING. Nothing! No need to preheat the oven because you don’t need it! Just chop up the veggies, wash the beans, and whip up the easy to make dressing and you are done. This is a raw salsa that consists of:

How To Store

If you are lucky enough to have leftover cowboy caviar, make sure you store it in a container that is air tight. This salsa lasts a few days and actually tastes better the longer it sits. You could make it the day before your party (huge time saver!).

The flavors of all the ingredients break down in the bowl and merge together. When you go to re-serve it, mix it up well and taste a small portion. You might want to add a touch of lime or salt and then remix it up.

Family Favorite

Cowboy Caviar is super easy to make, delicious to eat, and it is such a pretty dish to serve. The peppers, onions, beans, and corn bring a variety of vibrant colors such as green, yellow, orange, red, purple, and black. It’s almost too pretty to serve. However, it’s too good not to eat!

Ingredients

Salsa

  • 1 Purple Onion chopped
  • 1 Green Bell Pepper chopped

Two Ingredient Bagels That Are Healthy And Weight Watchers Approved

Two Ingredient Bagels sounded pretty interesting to me. I first heard of them during the beginning stages of the Covid19 lockdown days. A woman in a Facebook group mentioned how to make the 2 ingredient dough in lieu of regular dough since it sold out at the grocery stores.

What Two Ingredients?

Just two ingredients is all it takes to make these bagels which have been also referred to as Weight Watchers Two Ingredient Bagels. So what are these magical ingredients? Wait for it…Plain Greek Yogurt and Self Rising Flour. Can you believe that? And you can use the non-fat plain greek yogurt making these an incredibly healthy bagel! No wonder Weight Watchers endorses this recipe!

Self Rising vs All Purpose Flour

Again, when making the two ingredient bagels you only need flour and yogurt, specifically self rising flour. What is the difference between self rising flour and all purpose flour?

All purpose flour does not rise unless you add a leavening agent such as baking powder. Self rising flour already contains baking powder as well as salt. And as the name implies, it allows the dough to rise on it’s own. Nothing more is needed to assist with that.

If you don’t have self-rising flour, you can use ‘regular’ flour so don’t worry about that. A good adjustment to regular flour is to add a small pinch of salt as well as 1.5 teaspoons of baking powder to each cup of flour in your recipe. The baking powder will assist in the dough rising, the salt has nothing to do with that. The salt is purely for taste so depending on your preference, you can eliminate it altogether or add more than just a pinch.

Making The Dough

This is one of the easiest recipes you will find, especially when making dough. Just measure the ingredients (all two of them!), combine them in a bowl, and then mix them thoroughly. That is basically it! You will need to put some muscle into it and knead the dough. Believe it or not, the yogurt and flour will make a dough. It seems as though it would make a mushy mess, but I can assure you that the more you mix and knead the ingredients, the more it will begin to resemble dough. Amazing!

Making The Bagels

Now that the dough is done, you just need to shape it into bagel shapes. I’m sure you know what that looks like even without a picture. The easiest way to do this is to separate the ball of dough into 8 equal parts. Next, roll each part in the palm of your hand so that it looks like a ball. Then, using your thumb, push through the middle of the dough while pulling the sides to create that bagel-like (or doughnut-like) shape. It doesn’t take long so making these bagels will be quick and easy. Amazing!

Baking The Bagels

Once the bagels have formed, just brush them with an egg wash so that they get that golden color on top. If you don’t have an egg, it is not a problem, the egg is only for aesthetic reasons, it doesn’t really add much in terms of flavor. The egg does make the dough look a little nicer because it will brown the tops of the bagels rather than having them stark white – again, purely aesthetics. Adding a little salt to the tops would be a great addition, however. Too much salt is never a good thing, but using it in moderation is a beautiful thing.

Now that everything is ready to go, just put the two ingredient bagels in the oven and they will be ready in 20 to 25 minutes. Don’t walk away completely though, you will need to turn the bagels halfway through to ensure that they bake evenly.

When the bagels look done, take them out of the oven. Turn the heat up and then pop them back in the oven for 3 to 4 more minutes to get them that golden brown color that you want. That’s it! Sounds pretty easy? It is!

Cut into your bagels and spread your favorite cream cheese, butter, or jams. Or you can eat them as-is. Warm bagels don’t need a lot of extras!

Two Ingredient Bagels are SO EASY to make, just need nonfat greek yogurt and self rising flour!

Ingredients

Bagel Dough

  • 2 cups Self Rising Flour
  • 2 cups Non Fat Plain Greek Yogurt
  • *3 tsp Baking Powder *If you don't have Self Rising Flour*

Bagel Toppings

  • 1 Egg
  • pinch Salt
  • 1 tsp Water
  • Any seasoning you prefer, if you want

Instructions

  • Preheat oven to 375 degrees F.
  • Place parchment paper on a baking sheet and lightly coat with cooking spray.
  • In a large bowl, combine flour (and baking powder, if using) and yogurt until the mixture clumps to ball of dough.
  • Dump mixture onto a lightly floured work surface and knead the dough by hand until the dough is smooth and elastic (approx 5 min). Dust with add'l flour as needed if the dough is too sticky.
  • Divide the dough into 8 equal parts and shape each portion of the dough into a ball.
  • Use your thumbs to make a hole in the center of each ball. Gently pull and stretch until the dough is a uniform ring. Repeat with remaining dough balls. *Flour your hands as needed, if too sticky to handle.
  • Arrange the shaped bagels on the prepared baking sheet.
  • Mix together the egg wash by whisking the egg, salt, and water in a small bowl until smooth.
  • Brush the egg wash mixture over the bagels. Sprinkle desire toppings if desired (additional season, such as everything bagel, ranch, parm cheese, etc).
  • Bake for 20 to 22 minutes, rotating the baking sheet halfway through.
  • Remove from oven. Increase oven temp to 450 degrees F.
  • Return baking sheet to oven and bake for an additional 3 to 4 minutes until the tops of the bagels have browned.
  • Remove from oven and let cool.
  • ENJOY!

Ham and Cheese Calzone

A Ham and Cheese Calzone is the perfect finger food that you can eat for lunch, dinner, or a snack. It’s also the perfect party food! I mean, how many times have you been super excited that the host at a party was serving calzones??

A hearty appetizer that is SO tasty! Calzones, in general, are so much better than any regular sandwich. The pizza dough is the perfect bread to house warm ham and gooey cheese. A regular sandwich can’t compete with that! These sandwich-like rolls are scrumptiously delicious! The ideal sandwich everyone loves.

Pizza Alternative

I’m sure if you buy dough at the supermarket, you are probably planning on making homemade pizza. And there is no problem with that! Homemade pizza is a favorite in my house. My kids could eat pizza every night, if allowed. Homemade pizza is even better because you can top it with whatever you want, the best way to eat pizza is YOUR favorite way, after all.

But back to the dough. Do you ever consider making other things with that it? A great pizza alternative is a calzone. You can put whatever you want inside of the dough and bake it until it’s golden brown and the melted cheese is ready to ooze out. One of the easiest calzones to make is a ham and cheese calzone.

Ingredients Needed

  • Ham
  • Cheese
  • Dough
  • Garlic Powder
  • Onion Powder
  • Flour
  • Olive Oil
  • Butter

Easy To Make

If you are able to make homemade pizza and can figure out how to assemble a sandwich, you are equipped to make a ham and cheese calzone. Seriously, it’s so easy. Just spread out the dough to the length of a baking sheet. You will need to flour your hands and/or the dough so that it is pliable and doesn’t stick to your hands while you stretch it out. Add a little bit of olive oil to the baking sheet so the calzone doesn’t stick to the pan. Add the stretched out dough to the pan and start creating your masterpiece!

On one side of the dough add a piece of deli ham, then cheese. Keep repeating the pattern until you cover the length of the dough. Fold over the dough so that you cover the ham and cheese completely and press the edges together to seal the dough. Pretty easy so far, right? And you are practically done! All that is left is to brush on the melted butter on the top of the dough and season it with garlic and onion powder. Then bake. And then the hard part, waiting for it to be done!

Dig In

Once the ham and cheese calzone is cooked, you do have to wait a little longer. You don’t want to cut into it too soon because the cheese will just ooze out of it. Just give the calzone 5-10 minutes before cutting into it and it will be worth your while. Once you are ready to dig in, you will be in awe at how great of a cook you truly are!

Everyone will want to devour this so make sure you plan accordingly and make enough for your tribe. And if you want leftovers, it’s probably best to make 2 or 3 ham and cheese calzones! ENJOY!

Ingredients

  • 1 ball Pizza Dough
  • 1 tbsp Flour
  • 1 lb Ham deli meat – any flavor will work!
  • 3/4 lb Cheese American works best for melting
  • 1 tbsp Olive Oil
  • 1 pat Butter Melted
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Parsley

Instructions

  • Preheat oven to 450 Degrees F

Preparing the Dough

  • Put olive oil on baking sheet and swirl around well to cover entire pan – best to put a ziplock bag on your hand to swirl the olive oil around.
  • Next, sprinkle flour around pizza dough evenly so that you can handle the dough without it sticking to your hands.
  • Stretch out the dough to form a rectangle that will cover the baking sheet.
  • Once the dough has stabilized in the pan, you can begin making the calzone.

Adding the Filling

  • Fold a piece of ham in half and place it at the top of the dough, on one side of the dough, leaving approx 1/2" on the side.
  • Next, place the cheese slice on top of the ham about 1/2" – 1" down from the top of the ham.
  • Repeat ham and cheese placement until you have covered the entire length of the dough.
  • Fold over the empty dough side over the ham/cheese side and press the edges together so they are sealed around the entire calzone.
  • Brush melted butter on top of calzone.
  • Sprinkle parsley, onion powder, and garlic powder on top of the calzone.
  • Bake in preheated oven for 12-15 minutes or until golden brown.
  • Once cooked, remove from oven and let cool for 5-10 minutes. Calzone will be extremely hot.
  • ENJOY!

Cheeseburger Egg Rolls are a delicious treat you can serve as a lunch idea, party appetizer, or dinner itself! Kids and adults all love cheeseburgers. Serving them in an egg roll is fun and an easy to eat snack.

What Is A Cheeseburger Egg Roll?

In plain English, these cheeseburger egg rolls are AMAZING. I mean, cheeseburgers are an American favorite food. Additionally, this alternative version of your classic sandwich will be one of your new favorite ways to eat a burger!

The cheeseburger filling combines ground beef and cheese along with your favorite burger condiments; ketchup, mayonnaise, relish, mustard, and worcestershire sauce. The meat takes on a life of it’s own without needing a roll at this point, but it would be tricky to eat it as is. You could even serve this meat concoction over corn chips and have yummy cheeseburger nachos! Hmm, sounds like a great idea for another recipe…But what if you are trying to eat a cheeseburger alternative? That wouldn’t work in that case. With this cheeseburger egg roll recipe, you can create a yummy cheeseburger in a finger food form! Sounds great, doesn’t it?

Easy Appetizer Or Dinner Recipe

Basically, there are 2 parts to this recipe; making the cheeseburger filling & making the egg rolls themselves. Technically, I would rate this recipe as a novice to intermediate level of difficulty. The reasoning is that the first half is super easy to make. The second step takes a little more patience and time, but it isn’t super difficult.

Making the cheeseburger filling is super easy. If you have ever browned ground beef, you know that it is pretty simple. All you do is put the meat in a pan, cook until it’s browned and then it’s done! Simple! After that, you add the condiments and mix thoroughly. Simple!

Next step is to put the filling in the egg roll wrapper and wrapping them up before cooking. Wrapping an egg roll can be tricky. However, the first time I made these I survived! Ha, that’s what it felt like anyways. I was definitely apprehensive just thinking about making these. However, once I started wrapping and rolling the egg rolls up, my anxiety dissipated. Truly, this step wasn’t so bad. I’m confident that you can get through it and the cheeseburger egg rolls will come out beautifully!

Cheeseburger Egg Roll Ingredients

Cheeseburger Filling

  • 1 lb Ground Beef
  • 1/2 cup Onion finely diced
  • Mayo 2 tbsp 
  • Ketchup 2 tbsp 
  • Yellow Mustard 2 tbsp
  • 2 tbsp Relish
  • 2 tbsp Worcestershire Sauce
  • 1.5 cups Cheddar Cheese
  • 20 Egg Roll Wrappers
  • Cooking Spray

Special Sauce

  • 1/2 cup Mayo
  • 4 tbsp Relish
  • 2 tbsp Yellow Mustard
  • Vinegar White 1 tsp 
  • Paprika 1 tsp 
  • Onion Powder 1 tsp 
  • Garlic Powder 1 tsp 

Instructions

Cheeseburger Filling

  • Brown the ground beef in a skillet over medium high heat.
  • Once beef is cooked, drain grease. Add onions to skillet and cook until softened.
  • Add mayo, mustard, ketchup, and relish, and worcestershire sauce to ground beef and stir to combine. Salt & pepper to taste.

Making Special Sauce

  • Mix all special sauce ingredients together.

Making The Egg Rolls

  • Preheat Air Fryer to 380F or Preheat Oven to 400F
  • Lay each egg roll wrapper out with a corner pointing towards you. Place 1.5 tbsp of cheese and 1.5 tbsp of beef mixture in the center of each wrapper.
  • Fold in the sides and roll the wrapper tightly.
  • Use a dab of water to secure the tip of the wrapper.
  • Place the wrapped egg rolls on your air fryer pan.
  • Lightly spray the outsides of the egg rolls with cooking spray or brush on a light coating of olive oil.
  • Bake for 8-10 minutes in the air fryer (at 380 degrees F).Or 10-12 minutes in the oven (at 400 degrees F)
  • Serve warm and dip into special sauce.

Healthy Vs. Unhealthy Egg Roll

Typically, when you hear someone say Egg Roll, you think of an Asian appetizer that is filled with meat and veggies or just vegetables. Those egg rolls are usually fried. Therefore, you might assume that these Cheeseburger Egg Rolls are fried as well. Technically, you could fry these egg rolls. However, this recipe is to baked or air fry the egg rolls. Therefore, no unnecessary oil is needed for this scrumptious cheeseburger goodness! Does that make you feel better about eating a few of these? It should! Substituting ground turkey or ground chicken help bump up the healthy factor for this delicious dish. However, I am only focusing on ground beef to be used for these cheeseburger egg rolls.

Cheeseburger Egg Roll Cooking Options

Air frying is one of my new favorite ways to cook. I’m a little late to the game as far as air frying goes, I know. I recently bought a Cosori Air Fryer Toaster Oven. My toaster oven of 18 years finally bit the bullet and it was time to decide on just another toaster oven or upgrade to an air fryer/toaster oven product. Anyhow, I got the all-in-one product and now I can make these yummy cheeseburger egg rolls with the ease of an air fryer and without deep frying! Also, air frying takes less time than baking something in the oven. Another added bonus!

Because not everyone has jumped on the air frying bandwagon, I don’t want to discriminate and leave anyone out! After all, conventional oven bakers also need to experience this deliciousness! For that reason, there is an adjustment of temperature and timing for cooking these egg rolls in a conventional oven. The actual recipe does not need to be altered in any way. Just another amazing thing about this party favorite.

Cheeseburger Egg Rolls = Yummy!

I am confident that you will really enjoy these cheeseburger egg rolls. They are easy to make, minimal ingredients, easy to eat, and taste great! Just make sure you make enough for everyone.   • 1/2 cup Onion finely diced
  • 2 tbsp Mayo
  • 2 tbsp Ketchup
  • 2 tbsp Yellow Mustard
  • 2 tbsp Relish
  • 2 tbsp Worcestershire Sauce
  • 1.5 cups Cheddar Cheese
  • 20 Egg Roll Wrappers
  • Cooking Spray

Special Sauce

  • 1/2 cup Mayo
  • 4 tbsp Relish
  • 2 tbsp Yellow Mustard
  • 1 tsp Vinegar White
  • 1 tsp Paprika
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder

Instructions

Cheeseburger Filling

  • Brown the ground beef in a skillet over medium high heat.
  • Once beef is cooked, drain grease. Add onions to skillet and cook until softened.
  • Add mayo, mustard, ketchup, and relish, and worcestershire sauce to ground beef and stir to combine. Salt & pepper to taste.

Making Special Sauce

  • Mix all special sauce ingredients together.

Making The Egg Rolls

  • Preheat Air Fryer to 380F or Preheat Oven to 400F
  • Lay each egg roll wrapper out with a corner pointing towards you. Place 1.5 tbsp of cheese and 1.5 tbsp of beef mixture in the center of each wrapper.
  • Fold in the sides and roll the wrapper tightly.
  • Use a dab of water to secure the tip of the wrapper.
  • Place the wrapped egg rolls on your air fryer pan.
  • Lightly spray the outsides of the egg rolls with cooking spray or brush on a light coating of olive oil.
  • Bake for 8-10 minutes in the air fryer (at 380 degrees F).
    Or 10-12 minutes in the oven (at 400 degrees F)
  • Serve warm and dip into special sauce.

Egg Salad

Egg salad is the perfect way to eat those Easter eggs for lunch. Did your kids enjoy dying eggs this year? I’m sure they did! And I’m sure they wanted to do multiple eggs in order to try out different egg dying techniques. So much fun! But what the heck are you going to do with all of those eggs now that Easter is over?? Who could possibly want to eat 12 – 24 hard boiled eggs before they go bad? What to do, what to do…I know, you should make egg salad sandwiches! What a GREAT idea for lunches!

Notice how my egg salad (pictured above) is all different colors? It probably looks a little weird. It’s because when we dyed Easter eggs, the food coloring seeped through the shells and dyed the actual eggs! It’s all good though, we used food coloring which is supposed to be used on edible goodies. In the case of this egg salad, it looks a little funky though, but definitely okay to eat. It’s a fun egg salad!

Ingredients Needed

Besides the eggs that you dyed for Easter, you won’t need many other ingredients. And the best part is that you probably already have everything in your cabinet. Therefore, when you get that craving for an egg salad sandwich, you shouldn’t need to run out to the grocery store to get everything.

Here is what you will need:

  • 8 Hard Boiled Eggs Smashed Up
  • 1/2 cup Mayonnaise
  • 3/4 tsp Salt
  • 3/4 tsp Worcestershire Sauce
  • 3/4 tsp Yellow Mustard Any kind is fine – if you like spicy, try dijon. If you like sweet, try honey mustard. I prefer regular yellow mustard for mine.

A Different Lunch Idea

Egg salad is good any time of the year actually. You don’t have to eat it just once a year, you can whip up this sandwich filling any time. The ingredients are minimal. And boiling eggs? It’s pretty easy! You don’t have to be a gourmet cook to make this nutritious lunch, that’s for sure! Easy and delicious meals – those are my favorite!

Oh, and it’s cheap to make. That’s another favorite thing of mine. You could whip up a batch of this in 15 minutes and make enough for a week’s worth of lunches. How great is that? And the cost is next to nothing. I believe it’s less than $2.50 for a dozen white eggs. Add in the cost of the mayo, salt, worcestshire sauce, mustard, bread and you can make lunches for under $6.00 for a WEEK! A week! A cheap lunch idea that is much healthier than fast food and less expensive. It’s a huge win!

Making the Salad

If you know how to boil eggs, you got this! If you don’t know how to boil eggs, you can still make this. Just have to put some eggs in a pot of water and boil the water (with eggs in it). Done! How easy was that? Now, let the eggs cool down – best to do this by putting them in cold water for 10+ minutes. Once cooled, peel the shells. Put the hard boiled eggs in a bowl, smash them. Then add mayo, salt, worcestershire sauce, and mustard and mix thoroughly. Finally, just scoop some of the egg salad onto your favorite bread and your lunch is served. Easy-peasy!

Hard Boiling Eggs

  • Carefully place eggs in pot and cover with water.
  • Turn heat on stove to medium high and bring to a boil.
  • Once water boils, turn heat down to medium low and cook for an additional 8 minutes.
  • When time is up, immediately place boiled eggs in ice water to cool completely. Will take several minutes, but can remain in there as long as you like.

Making Egg Salad

  • Peel hard boiled eggs and place in a medium size bowl.
  • Smash up the eggs.
  • Next, add mayonnaise, salt, worcestershire sauce, and mustard.
  • Mix all ingredients thoroughly so that the eggs are covered with everything.
  • Eat as is or scoop the egg salad onto your favorite bread to make a yummy sandwich.
