Grilled Haddock is the perfect meal to serve in the summer time. Actually, it is the perfect meal to serve any time of year! If you live in colder climates in the winter, just make sure your grill is accessible and you can make this yummy dinner year round.

You will love the ease of this dish, not to mention, you will love the delightful taste of haddock, lemon, dill, and just a touch of butter. Simple, yet delicious!

Haddock

Haddock is a saltwater fish that is found in the North Atlantic Ocean. It is a popular white fish which consists of a mild taste just like that of cod. Additionally, haddock has many of the same health benefits as cod. A little trivia for you…young, fresh haddock and cod fillets are often sold as scrod in Boston, Massachusetts. Have you ever heard of Scrod before? Probably not, if you live outside of Boston area! The size of the fish dictates whether it is called Haddock, Cod, or Scrod. Weird, right?

Haddock is a lean protein, making it better for you than red meat. Additionally, there are many other benefits that come along with haddock such as vitamin B6, vitamin B12, vitamin D, and magnesium. These vitamins and minerals improve digestion, level hormones, strengthen bones, promote brain function, and help to prevent cancer, along with many other health benefits.

Dill

Dill which comes from dill weed is a plant in the parsley family. It is boosts digestion and can provide relief with hiccups, diarrhea, menstrual disorders, respiratory disorders, and various types of cancers. Dill is widely used with pickles. And, it just so happens that my favorite potato chips are Lay’s Dill Pickle Flavored Potato Chips. Therefore, I am a huge fan of this combination! Another popular use for dill is to flavor fish with it. It brings a mild tasting fish like haddock to a whole new level of tastiness. Also, it raises up the healthy factor a few notches as well.

If you are looking to grow this amazing herb, you should know that it is an annual herb that is closely related to celery. As such, it tends to replant itself and spreads widely. A low maintenance herb! Ideal for someone who doesn’t want to tend to their garden constantly.

Grill Mats

I recently bought grill mats as Father’s Day gift and just tried them out. I’m obsessed! First of all, your grill stays clean! No more scrubbing grill grates after you finish cooking your meal. No more wasting propane to heat the grill grates for easier cleaning. Just wash the grill mats with soap and water, let them dry (they dry quickly!), and then put them away.

Additionally, you when grilling fish, veggies, or small pieces of meat, you won’t need foil to keep your food from slipping through the grill grates. Just place it directly on the grill mat and cook away! I have the Aoocan Grill Mats, but there are many out there to choose from. If you have tried a grill mat, you know how great they are. If you haven’t tried one yet, do yourself a favor and get one!

Ingredients Needed

You don’t need many ingredients to make this deliciously healthy dinner. Just a few key items and you will be ready to go!

  • 2 lbs Haddock
  • 2 Lemons juiced
  • 1/2 bunch Dill fresh – and chopped
  • Sea Salt to taste
  • Pepper to taste
  • 2 tbsp Butter melted

How To Make

Whether it is too hot to turn the oven on or you just want a change of pace, grilling is a great way to cook dinner. Grilling offers a healthy way of cooking and it is so easy to clean up!

Here is what you need to do to make this yummy dinner:

  • Preheat the grill to medium heat. Add grill mat(s) to the grill.
  • Pat the haddock with paper towels to soak up the liquid in the fish.
  • Add sea salt and pepper to the fish (both sides).
  • Cover the haddock with the juice from the lemons, making sure to evenly cover the pieces.
  • Top haddock with dill, there is no such thing as too much!
  • Once grill reaches at least 400 degrees F, add the haddock to the grill mat(s).
  • Reduce heat to medium low and pull grill cover down.
  • Cook for 5 minutes. Then check how the haddock looks.
  • Cook for an additional 3-5 more minutes (depending on thickness of the haddock).
  • Melt butter in the microwave in a microwavable safe dish.
  • Remove haddock from the grill and drizzle melted butter over haddock.
  • Serve immediately.

Healthy Dinner

Sweet, But Strong Blueberry Watermelon Martini

This sweet, but strong blueberry watermelon martini will be your new favorite cocktail. To be honest, I’m a little obsessed with this drink. This was my martini of choice this past summer. I especially loved putting in a good size watermelon chunk at the bottom of the martini glass because after the drink was gone, the watermelon remained! I loved getting that last bite of the martini for that extra punch.

As previously mentioned, this is a sweet drink, but I must warn you, it is STRONG! Keep that in mind and sip on this yummy cocktail s-l-o-w-l-y! With just 2 ingredients, you might forget how much alcohol content it contains, but let me tell you, it will catch up to you! Drink responsibly.

Ingredients Needed

The blueberry vodka brings a little sour to this drink. And the watermelon liqueur balances it out with a sweetness that you expect. Just the 2 ingredients make up a delicious concoction that will delight anyone who enjoys a fruity taste.

Here is what you need for this funky, yet simple martini:

  • 2 oz Blueberry Vodka
  • 2 oz Watermelon Liqueur (I prefer 99 Watermelons)
  • Red Sugar for glass garnish
  • 1 Watermelon Wedge for garnish

Instructions

Fourth of July Charcuterie Board Is Extra Festive

Fourth of July Charcuterie Board is the perfect platter to serve at your holiday barbeque. How many times have you thought, what can I bring that will stand out, is easy to make, and won’t take a long time to make? If you are like me, you probably do it for every party you attend!

This fourth of July charcuterie board is absolutely adorable and 100% practical. Everyone loves to eat fresh fruit, especially in the summer time. But who wants to make a huge fruit salad? Not me! Cutting up all those giant melons is a pain in the butt. Not to mention, a large fruit salad costs a small fortune! With this festive tray of red raspberries, strawberries, blueberries, blackberries, mini marshmallows, and cheddar cheese, you can put a little of something for everyone to enjoy.

What is a Chaucuterie Board?

I only heard of the phrase charcuterie board recently. Yes, I’m extremely late to the cheese board party which is a bummer because I’m a huge fan of cheese boards! These days you don’t want to just serve cheese and crackers, rather, you want to provide your guests with a charcuterie board that is filled with cheese, crackers, and lots of other yummy goodies!

So what is a charcuterie board? Charcuterie is a French word for cured meats. The French have always featured charcuterie boards dating back to the 15th century. A typical French charcuterie board contains a few different (salty) meats, slices of baguette, a few cheeses, a couple of spreads for the bread, and possibly some grapes as well. In the last few years, charcuterie boards have exploded in the US and consist of a variety of different ingredients that can range from the traditional charcuterie board to desserts, and even holiday themed boards. The possibilities are endless and it’s a lot of fun to get creative with the accompaniments. Ingredients Needed

You could serve whatever you prefer with your fourth of July charcuterie board. I choose a variety of berries that showcase the American flag colors of red, white, and blue. However, if you might also want to add some fresh figs, watermelon, a dipping cup of vanilla yogurt. Whatever you would like to add, do it. This is a creative way to serve food. You are in charge : )

Here is what I used for my fun holiday platter:

  • 1 pint Blackberries
  • 1/2 pint Blueberries
  • 1/2 quart Strawberries
  • 1 pint Raspberries
  • 1 cup Mini Marshmallows

Making Your Platter

Making this cheery plate is super easy to do. There is no cooking involved. Honestly, this is so easy that you it really won’t take longer than a few minutes, but that will depend on how detailed you want to go with this.

All you need to do is clean the berries, cut some cheese, and let your creativity take control! You could get really fancy and arrange the berries, cheese, and marshmallows to mimic the American flag. Wouldn’t that be cool?

Here is what you need to get started:

  • Divide each ingredient in half.
  • Place raspberries together, then blueberries, then cheese, etc alternating colors across a chaucuterie board.
  • Take the other half of ingredients and alternating colors, fill in the chaucuterie board so that it is filled.

Charcuterie boards have become popular because they make an impressive statement at a party, yet they are very easy to prepare. Guests gawk at the dramatic display of meats, cheese, crackers, fruits, nuts, etc. And you know what? This is one dish that will not have leftovers! It’s great to have happy guests with full bellies, however, if you are looking forward to a late night snack after your guests leave, you probably won’t be digging into this delicious platter.

Sweet Baby Ray’s Chicken

Sweet Baby Ray’s Chicken slow cooks in a crock pot on low heat for 4 to 6 hours. It is the best way to eat pulled chicken and really takes the guess work out of how to make the best bbq pulled chicken.

I love making this delicious dinner on busy weeknights. Just add the chicken to the crock pot, mix up the sauce ingredients, pour over the chicken, and then let the crock pot work its magic. Prepping this dinner takes about 5 minutes. Super easy even on those chaotic weekday mornings, when you are running late. And, wow, is it worth that “effort” when you get home from a crazy day and dinner is waiting for you!

Pulled Chicken

Have you heard the terms pulled chicken or pulled pork? You probably know what they taste like, but do you know why they are called that? Pulled chicken and pork is a staple way of cooking meat when it comes to BBQ cuisine. Basically, it’s slow cooking the meat so that it stays tender as it cooks for hours. It gets so tender that it is able to be pulled apart or shredded into pieces with just a fork.

Cooking this sweet baby Ray’s chicken is super easy to do in a crock pot. The chicken cooks on a low heat for 5 to 6 hours. The phrase, Low and Slow, certainly applies here. And it is the only way to eat pulled chicken! Well, that is if you want to do the easy bbq way. If you are a true bbq champion, you would certainly opt for a smoker. However, if you are looking for a super easy way to make a yummy dinner, stick with me and try this delicious crock pot recipe!

Sweet Baby Ray’s

Sweet Baby Ray’s barbecue sauce originated in early 1980s by brothers, Dave and Larry Raymond. The brothers entered their newly created bbq sauce into competitions and did very well each time. Their accomplishments encouraged them to take things to a new level and they began their company, Sweet Baby Ray’s BBQ Sauce so that they could sell their product to consumers.

By the time the Raymond brothers sold their business in 2005, they were earning millions in revenue. Just a few years later, Sweet Baby Ray’s was the 2nd best selling barbecue sauce in the United States. One of the brothers retained the rights to the name “Sweet Baby Ray’s” to this day. A great success story about a family owned business.

Ingredients

  • 2 lbs Chicken boneless
  • 18 oz BBQ Sauce Sweet Baby Ray’s (entire bottle)
  • 1/2 cup Brown Sugar
  • 1/2 cup Apple Cider Vinegar
  • 2 tsp Garlic Powder
  • 1 tsp Crushed Red Pepper

How To Make

Yes, this is the entire recipe for this yummy dinner! None of the steps have been mistakenly clipped! Can you even believe how simple this is? It’s an amazingly easy recipe that tastes amazing!

Here’s all you need to do:

  • In a medium bowl, mix bbq sauce with vinegar, brown sugar, garlic powder, and crushed red pepper together.
  • Place chicken in the crock pot.
  • Pour sauce mixture over the chicken.
  • Cook on low for 4 to 6 hours. Make sure to stir the sauce and chicken here and there. The chicken should be submerged in the liquid so that it doesn’t dry out.

When the chicken is done, you could just serve it on a fresh roll and have a pulled chicken sandwich. Or you could go all out and serve it with some macaroni and cheese and a salad like I did in the above picture. And, yes, that is Kraft Macaroni and Cheese! I love that mac and cheese and not embarrassed to admit it. Sometimes you need to just take some good shortcuts with dinner and Kraft Mac and Cheese certainly qualifies as that!

Whether you don’t have time to cook in the evenings or it’s just too hot to turn on the oven, crock pot recipes are a great way of making dinners EASY!

Sweet BabyRay’s Crockpot Chicken

Baked Chicken Parmesan

Baked Chicken Parmesan consists of the same yummy taste of a traditional chicken parmesan, however, with this recipe, the chicken is not deep fried. As expected, eliminating the frying process eliminates the added fat, grease, and calories! Therefore, this is a healthier version of the Italian classic dinner with the same amazing taste. Yes, it’s true. This tastes so delicious that your taste buds won’t know the difference, but your hips will!

Chicken Parmesan

Chicken Parmesan is an Italian dish that consists of breaded, boneless chicken breast that is covered in tomato sauce and cheese. Typically, the chicken is flattened so that it is a thin piece of meat which is breaded and then deep fried for a moist center with a crispy outside, which is then considered to be a chicken cutlet. Next, the chicken cutlet is topped with tomato sauce and cheese (mozzarella, parmesan, or provolone cheese) and then baked in the oven to melt the cheese directly on the chicken.

If you haven’t had it before, you really haven’t lived. It is, by far, one of the best Italian dishes you can eat. Chicken parmesan can be served as alone cutlet, over pasta, or in a fresh roll for a delicious sub. Mmm, mmm!

Parmesan

A parmesan dish is considered to be a flattened piece of meat that can consist of chicken, veal, eggplant (although not a meat, it is typical for this veggie to be served in parmesan form), or beef which is then breaded by first dipping the meat in egg (both sides) and then coating it with a breadcrumb mixture and then deep fried so that the meat cooks quickly leaving it moist, but has a crispy coating on the outside that is flavorful. It is then baked with tomato sauce and cheese, often parmesan or mozzarella cheese.

Parmesan cheese is hard cheese that derives from Italy that is now produced all over the world. Parmesan has a salty flavor that is a very pungent tasting cheese. This is not a cheese that most people would eat by itself, rather, it is best used as a topping for pastas or pizzas or as an ingredient in recipes.

Chicken Parmesan Ingredients

You won’t need anything out of the ordinary to make this yummy baked chicken parmesan. In fact, most of the ingredients are probably stocked in your pantry and refrigerator right now. If you don’t make your own tomato sauce, don’t worry, you can use jarred tomato sauce for this recipe. Of course, it won’t be an authentic chicken parm dinner, however, it will still taste great. You might want to try Barilla Tomato & Basil.

Here is the list of ingredients that stand between you and making this baked chicken parmesan:

  • 3 tbsp Olive Oil
  • 2 lbs Chicken Breasts butterflied
  • 2 Eggs
  • 1 cup Parmesan Cheese
  • 2 cups Panko Bread Crumbs
  • 1.5 tsp Dried Oregano
  • 2 tsp Garlic Powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 cups Marinara Sauce
  • 1.5 cups Shredded Mozzarella Cheese

Baking The Chicken Parm

Making this Italian delicacy consists of a 2-step process; breading the cutlets and then baking them. This doesn’t take long from start to finish so don’t worry. Clean everything up and get that table set while the cutlets are baking. Oh, and don’t forget to make that yummy side of pasta while the baked chicken parm is in the oven!

  • Preheat oven to 400 degrees F.
  • Line a baking sheet with foil and brush foil with olive oil.
  • Cut the chicken breasts in half (butterfly the chicken) and slice into 2 pieces.
  • After cutting all chicken, place chicken in ziplock bag and pound the chicken breasts (with a meat pounder) to an even thickness.
  • Pat the chicken breasts with a dry paper towel, then season with salt and pepper.
  • In a shallow dish, mix together panko bread crumbs, parmesan cheese, salt, pepper, garlic powder, oregano, and black pepper.
  • In another shallow dish, whisk the eggs.
  • Dip one chicken breast into the egg, then into the bread crumb mixture. Make sure chicken breast is fully coated in the crumb mixture and gently press your hand to help the crumbs stick to the chicken.
  • Place chicken breast on prepared baking sheet and repeat with remaining pieces of chicken.
  • Place baking sheet in the oven and bake for 15 minutes (or until cooked through).
  • Flip the chicken and pour an even amount of marinara sauce over each piece of chicken.
  • Top each chicken with shredded mozzarella cheese.
  • Place back in the oven and turn on broiler on high for 2-4 minutes until the cheese is melted and bubbly and edges of chicken are get browned.
  • Serve Immediately.

  • Dip one chicken breast into the egg, then into the bread crumb mixture. Make sure chicken breast is fully coated in the crumb mixture and gently press your hand to help the crumbs stick to the chicken.
  • Place chicken breast on prepared baking sheet and repeat with remaining pieces of chicken.
  • Place baking sheet in the oven and bake for 15 minutes (or until cooked through).
  • Flip the chicken and pour an even amount of marinara sauce over each piece of chicken.
  • Top each chicken with shredded mozzarella cheese.
  • Place back in the oven and turn on broiler on high for 2-4 minutes until the cheese is melted and bubbly and edges of chicken are browning.
  • Serve with pasta.

Fig and Goat Cheese Pizza is not your average tomato sauce and mozzarella cheese pizza. This delectable pizza has contrasting tastes that combine exquisitely. The sweet taste of figs with the poignant taste of goat cheese really blends well with their clashing tastes. Even picky eaters will love this flatbread type of pizza.

Just 4 easy to find ingredients are needed to make this delectable meal; crescent rolls (I prefer Pillsbury Crescent Rolls), fig jam, goat cheese, and rosemary.

Flatbread Pizza

While I wouldn’t completely say that this fig and goat cheese pizza is technically a flatbread pizza, it is much thinner and breadier (is that even a word?) than regular pizzas. Therefore, I’m going on a limb and calling it a flatbread pizza for comparison. Hear me out.

Flatbread pizzas have been trendy for some time now. There are a variety of funky pizza concoctions that are added to flatbread that create fancier pizzas. Some flatbread pizzas have salads on them, others have full blown meals on top of them (short rib flatbread pizzas – yum!) and the list goes on and on.

Flatbread pizzas are much more than just mozzarella cheese, pepperoni, or mushrooms. Rather, they are complex with many toppings and flavors that combine opposing tastes that blend together, ironically, well.

This fig and goat cheese pizza is similar to a flatbread pizza with the sweet taste of figs, but with the contrasting flavors of goat cheese and rosemary. A few years ago, I would have said, hell no to this pizza! I love my red sauce pizzas with mozzarella cheese and pizza dough after all. However, after being exposed to these yummy flatbread recipes, they have since grown on me. Therefore, if you are new to these types of pizzas, you need to try these flavors together. Trust me, they grow on you. And as they grown on you, they become addictive and you find yourself craving these types of foods!

This yummy pizza consists of just 4 ingredients. You will need the following:

  • 1/2 cup Fig Jam
  • 1 can Crescent Rolls
  • 2-3 tbsp Goat Cheese Crumbled
  • 1 tbsp Rosemary

  • Preheat oven to 375 F.
  • Roll out the crescent rolls and pinch the seams together to form a rectangular pizza dough.
  • Spread the fig jam over the dough, leaving 1/2″ around the perimeter of the dough.
  • Crumble goat cheese and place evenly on the fig jam.
  • Sprinkle rosemary over the entire pizza.
  • Bake for 10 – 12 minutes (less for a more doughy pizza, more time for a crispy crust).
