No Cook Cilantro Shrimp Salad Is Healthy And Delicious

Cilantro Shrimp Salad is the absolute best dinner you can choose on a hot summer night. Loaded with nutritional value and lots of tasty salad ingredients such as corn, black beans, cucumbers, lime, and avocados along with shrimp, your stomach will be in heaven and your hips will certainly thank you!

And if you buy cooked shrimp, you won’t have to cook at thing with this delicious dinner. You won’t have to turn on your oven and heat up your house on a hot night. Nor will you have to slave over a blazing grill and sweat your butt off when making dinner. This dinner requires no cooking, is filling, and tastes great sounds like a great idea. And, you know what? It is!

Shrimp Facts

Shrimp are crustaceans with elongated bodies that primarily swim versus walk on the bottom of the ocean floor. They are abundant and adapt to a wide range of environments, generally feeding on the ground within different bodies of water such as oceans, rivers, and lakes. They generally live anywhere from 1 to 7 years. And they play an important role in the food chain. They are a source of food to fish, whales, and, of course, human consumption.

Some of the great benefits that shrimp provide to us humans are:

  • Low Calorie Food
  • High In Protein
  • Many Nutrients

Low calorie

Other than the delicious taste of shrimp, another added bonus is that they are low in calories. One medium shrimp is only about 7 calories, which equates to less than 85 calories for a dozen shrimp!

One jumbo shrimp (often served in shrimp cocktail), is approximately 14 calories. Therefore, three jumbo shrimp is about 45 calories. Are you suddenly in the mood for shrimp or is it just me?!

High in protein

Shrimp are consist of water and lots of protein. Here’s a fun fact, three ounces of shrimp is about 20 grams of protein. To put that into perspective, that is about the same a three ounces of chicken. Who would have thought that this tiny shellfish contains approximately the same amount of protein as white meat. Further, shrimp not only are a great source of protein, but they contain very little fat and carbohydrates. This cilantro shrimp salad is sounding better and better!

Nutrients Galore

Beyond the high protein, low fat, and low carbs that shrimp contain, they are also full of nutrients. To name a few, there is selenium, vitamin B12, phosphorous, choline, copper, and iodine. Additionally, shrimp are a source of antioxidants.

Selenium helps your immune system and thyroid function. It also fights off particles that can damage DNA, leading to premature aging and disease. I guess you could say that selenium is a fountain of youth. And the antioxidant that provides the primary color in shrimp, helps reduce inflammation which can add to premature aging and disease. I don’t know about your, but I’ll take more shrimp please!

Ingredients

I love, love, love this yummy cilantro shrimp salad. It has some key ingredients like shrimp, black beans, cucumbers, tomatoes, corn, red onions, lime and avocado (to name a few) that come together deliciously! It’s like taking some of your favorite traditional salad items and mixing them with pasta salad items. And it is magical!

Here is what you will need for this tasty and nutritious dinner:

Dressing

  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 tbsp Olive Oil
  • 1/2 cup Lime Juice
  • 2 tsp Garlic minced
  • 1/2 cup Cilantro finely chopped

Salad

  • 2 lbs Jumbo Shrimp cooked and peeled
  • 1 can Corn drained
  • 1 can Black Beans rinsed and drained
  • 1/2 cup Red Onions diced
  • 1 pint Cherry Tomatoes halved
  • 1 Cucumber chopped into large pieces
  • 2 Avocados peeled, pitted, and chopped
  • 1/4 cup Cilantro finely chopped

Instructions

I not only love the taste of this cilantro shrimp salad that is truly a meal, but I absolutely love that it is super easy to make! And, I can’t stress it enough, you don’t have to cook this delicious meal…just get the pre-cooked shrimp, then you just have to chop, mix, and serve!

Here is what you will need to do:

Dressing

  • Combine dressing ingredients into a small bowl and whisk together until combined.

Salad

  • In a large bowl, combine all the salad ingredients and mix well.
  • Add dressing to the salad and combine well.

More Healthy Dinners

I’ll admit, I’m not the healthiest eaters all the time. I do try to eat healthy meals (sometimes, anyway!). Hey, if you can eat healthy food that tastes great and doesn’t take hours to prepare, why not eat like that on a regular basis? Notes

Please note that if you don’t have pre-cooked shrimp, you will need to cook the shrimp before adding to the salad.  You can boil or saute the shrimp, either works fine.  Once cooked, let them cool in cold water for at least 15 minutes before adding to salad.

Shrimp & Asparagus Scampi

Shrimp & Asparagus Scampi is my personal version of shrimp scampi. If you have never had or heard of shrimp scampi, you need to listen up! It’s delicious! Well, if you aren’t a fan of shrimp, you probably wouldn’t enjoy this Italian pasta dish. However, if you do like to eat shrimp, you will probably LOVE this yummy dinner!

Scampi

Shrimp scampi is typically a garlic and oil sauce that is seasoned with garlic, butter, and white wine. Of course, it consists of shrimp and is served with pasta; typically a noodle pasta like spaghetti, angel hair, or fettuccini. Just describing this dish is making my mouth water. I love twirling the pasta with my fork, using the spoon for leverage so that I can get that perfect bite every time! Yum!!

I love typical shrimp scampi, it’s hard not to love a wine sauce with butter and garlic. I am Italian, after all. It’s vital for my existence to have garlic on a regular basis! However, when I make scampi, I like adding extras to it so that it seems like a more complete meal with vegetables. Therefore, I make shrimp and asparagus scampi. I love adding grape tomatoes to garlic and oil sauces as well so this yummy dinner consists of asparagus and tomatoes in addition to the shrimp and pasta. How is that for a complete meal? Pretty tasty, if you ask me!

Ingredients Needed

This amazingly delicious shrimp and asparagus scampi does not require many ingredients. It is really easy to make and just needs the basics. As you can see, this is all you will need:

  • 2 tbsp Olive Oil
  • 2 tbsp Garlic minced
  • 1 bunch Asparagus cut into 3 pieces for each stalk
  • 1 pint Cherry Tomatoes
  • 2 lbs Shrimp pre-cooked
  • 3 tbsp Butter
  • 1 cup White Wine
  • Salt to taste
  • Pepper to taste
  • Parsley garnish/taste
  • 1 lb Pasta any spaghetti or pasta will work

Cooking The Scampi

For such an elegant looking dinner, cooking this culinary masterpiece is as easy as cooking home made burgers on the grill. Seems like a strange comparison, but seriously when you make your own burgers, usually you season the hamburg, divide up the meat, and form the patties. Then you put the burgers on the grill and let them cook. A little while later, flip them and repeat the cooking time. Basically, you do a few steps and everything comes together quickly. It’s a pretty easy dinner. This shrimp and asparagus scampi is pretty has a few steps to follow and is easy too!

Before starting the scampi sauce, you want to boil the water for pasta. Since there is barely any prep work for this dish and cooking the pasta takes the longest, start cooking the pasta as soon as possible. Once that is going, move on to the goodness of this dish – the sauce!

Start out by heating some extra virgin olive oil in a large pan. Once the oil is hot, add some garlic and let that sizzle for 1 to 2 minutes. The smell of garlic sauteing is amazing! The yummy aroma fills up the kitchen instantly and everyone will be wondering what you are making tonight. Once the garlic has a golden brown color, add asparagus and tomatoes to the pan. Cook them for approximately 5 to 6 minutes, until the tomatoes start to look a little wilted. Then, add the shrimp to the pan and mix everything around. Now add the butter and let it melt into everything. Continue to mix everything together. After that, add the white wine to your creation, cover, and cook for another 5 minutes so the wine reduces and incorporates that sweet taste into your scampi sauce. Finally, add in your pasta and swirl it around the sauce to get it mixed evenly. Voila, your shrimp & asparagus scampi is ready to eat!

Amazing Dinner

Shrimp & Asparagus Scampi might not be a meal that you make on a regular basis because of the price tag of shrimp. However, if you are lucky enough to afford this yummy shellfish regularly, you will be happy to know that this elegant dinner is easy dinner to make. Not only is it easy to cook, but it cooks in less time than some average dinners such as goulash.

If you are like me and love the taste of shrimp, but can’t justify the price all the time, this is a great dinner to make from time to time. In my family of 8 people, it doesn’t make sense to eat seafood all the time, but we do love it. The shrimp & asparagus scampi is a nice splurge every once in a while! And it’s a lot cheaper to make this dinner at home than to eat it in a restaurant. That will make you feel a lot better when you pay for that pricey shrimp!

Shrimp & Asparagus Scampi

Deliciously easy to make Shrimp and Asparagus Scampi.

Ingredients

  • 2 tbsp Olive Oil
  • 2 tbsp Garlic minced

Instructions

Cooking the Pasta

  • Fill pasta pot 2/3 with water. Bring to a boil.
  • Once water is boiling, add the pasta to the pot and cook for 7-8 minutes.
  • Drain water from pasta and add to sauce pan.

Cooking the Scampi Sauce

  • Heat Oil in large pan over medium heat.
  • Add garlic to pan and cook for 1-2 minutes so that it gets brown.
  • Now, add asparagus and tomatoes to pan. Let cook for 5-6 minutes. Tomatoes should start to look a little wilted.
  • Then, add shrimp to pan and mix everything around. Also, add butter and let it melt.
  • Next, add wine to the pan. Cover and cook for 5 minutes.
  • Add the pasta to the pan and mix well.
  • Once mixed thoroughly, add salt and pepper to taste.
  • Top with parsley and serve.
  • ENJOY!

Shrimp Fried Rice

Shrimp Fried Rice is the healthiest fried food you will be able to make AND enjoy! If you are like me, you probably love getting Chinese takeout. I’m pretty obsessed with appetizers at Chinese restaurants and need to order a few key apps like Crab Rangoon and Chicken Fingers. Another item I always order is Fried Rice, ideally House Fried Rice which is a mixture of rice, veggies, egg, and shrimp. Yum! It’s like getting so many dishes all in one yummy rice.

Ingredients Needed

If you have ever made homemade Chinese food, you probably know that the dishes require quite a few ingredients. The good thing is that those ingredients are pretty healthy and very flavorful. Another good thing is that most of the ingredients are things you keep stocked in your pantry and refrigerator.

For this Shrimp Fried Rice, you will need the following:

  • 2 tbsp Vegetable or Canola Oil
  • 16 oz Shrimp raw and de-veined
  • 1 cup Onion diced
  • 1 cup Carrots diced
  • 1.5 tbsp Garlic minced
  • 1 tsp Ground Ginger
  • 3 cups Cooked Rice
  • 1 Egg
  • 1/2 cup Frozen Peas
  • 1/4 cup Soy Sauce low sodium
  • 2 tbsp Rice Vinegar
  • 1/2 tbsp Sesame Oil
  • Chopped Green Onions if desired for garnish

How To Make

Like most skillet meals, you will start by heating some oil. Next, cook the meat and in this case, cook the shrimp. After the shrimp is cooked, set it aside and move to cook the veggies and seasonings. After those are tender, you will mix in the cooked rice (that you have already prepared before beginning this process) to ‘fry’ it up. Don’t worry, the rice won’t be deep fried, you just want to make the rice crispy. Next, push the rice to the side and crack an egg to cook up and scramble. Then mix the scrambled egg into the rice mixture. Finally, you will add the peas, rice vinegar, and sesame oil to the rice to combine for a few more minutes. Can you believe you just made this yummy looking shrimp fried rice? It looks great, doesn’t it? And it was pretty straightforward and easy!

Making It A Meal

The Shrimp Fried Rice is a great Chinese takeout alternative that you can make at home. This healthy fried food cooks in under 30 minutes. Therefore, it’s healthy, easy to make, and cooks quickly. Awesome! Wouldn’t you prefer to skip fast food and opt for something healthy on those crazy schedule kind of nights? Just throw this dinner together and it will taste great!

The rice mixture consists of everything you would need in a complete meal that cooks in one skillet. Again, awesome so that the cleanup is minimized. If you did want to bring your homemade Chinese food to a takeout order kind of level, you could make a few appetizers to pair with this rice. I have quite a few recipes for Chinese dishes and apps on my site. A few easy ones you could pair with this shrimp fried rice is Crab Rangoon and/or Chicken Fingers. Who knew making your own Chinese food was so doable?

Ingredients

  • 2 tbsp Vegetable or Canola Oil
  • 1 lb Shrimp raw and de-veined
  • 1 cup Onion diced
  • 1 cup Carrots diced
  • 10 oz Mushrooms any favorite is fine
  • 1.5 tbsp Garlic minced
  • 1 tsp Ground Ginger
  • 3 cups Cooked Rice
  • 1 Egg
  • 1/2 cup Frozen Peas
  • 1/4 cup Soy Sauce low sodium
  • 2 tbsp Rice Vinegar
  • 1/2 tbsp Sesame Oil
  • Chopped Green Onions if desired for garnish

Instructions

  • Heat 1 tablespoon of the oil in a large non-stick skillet or wok over high heat. Add the shrimp to the pan and season with salt and pepper. Cook the shrimp until pink and no longer translucent. Transfer the cooked shrimp to a plate and keep warm. Set aside.
  • Add the remaining oil to the pan and stir in the onions. Cook the onions until softened, approximately 3 minutes.
  • Stir in the carrots and mushrooms and cook for an additional 3 minutes or until softened. Add the garlic and ginger, cooking until fragrant.
  • Stir in the rice and cook for 2 to 3 minutes or until the rice is crisp.
  • Push the rice to the sided of the pan making a well in the middle. Crack the egg in the middle of the pan and stir to scramble. Cook the egg and then begin to stir into the rice mixture.
  • Add the peas, soy sauce, rice vinegar and sesame oil to the rice stirring to combine. Cook for an additional 1 to 2 minutes. Stir in the shrimp and cook for an additional minute to warm through.
  • Serve immediately topped with chopped green onions, if desired.
