Walnut Cranberry Chicken Salad

Walnut Cranberry Chicken Salad is the perfect dish that you can enjoy as a lunch, dinner, or even a snack. During the high temps and humidity that comes with the summer months, this is a refreshing food to serve. If you use the cheats for this recipe, you don’t have to cook anything! Just cut up the meat on a rotisserie chicken and mix in the rest of the ingredients. Serve as-is, on fresh bread, or on your favorite crackers. That’s it! Super easy, yet it has a gourmet taste to it.

Ingredients Needed

This out of the ordinary chicken salad is really easy to make. You will just need a few key ingredients and you will be able to dig in a few minutes later! Here is what you will need:

  • 1 Rotisserie Chicken family size approx 6lbs, chop the chicken
  • 3 Celery Stalks chopped
  • 1 cup Craisins chopped
  • 1 cup Walnuts chopped
  • 1/3 cup Mayonnaise

The beauty of this recipe is that you can customize it to whatever your favorite ingredients are. Perhaps you enjoy the recipe as it stands, but you don’t have certain add-ins. You can make some substitutions with raisins instead of craisins, or chopped apples or grapes. Further, you could switch up almonds instead of walnuts. There is no right or wrong here, just yummy tasting food!

How To Make

  • Cut up all chicken, celery, and walnuts.
  • Add chicken, celery, walnuts, and mayonnaise to a large bowl and mix well.
  • Serve by itself or on bread.

It only takes a few minutes to toss some chicken with a simple dressing and a few add-ins. You can customize with whatever you have on hand. Sub the cranberries for raisins, or chopped fresh apples or grapes. Further, you can use almonds instead of walnuts. Just go for it!

Low Carb

Although this recipe is fairly healthy the way it is now, you could make it lighter by using Greek yogurt instead of mayonnaise. Ham and Cheese Calzone

A Ham and Cheese Calzone is the perfect finger food that you can eat for lunch, dinner, or a snack. It’s also the perfect party food! I mean, how many times have you been super excited that the host at a party was serving calzones??

A hearty appetizer that is SO tasty! Calzones, in general, are so much better than any regular sandwich. The pizza dough is the perfect bread to house warm ham and gooey cheese. A regular sandwich can’t compete with that! These sandwich-like rolls are scrumptiously delicious! The ideal sandwich everyone loves.

Pizza Alternative

I’m sure if you buy dough at the supermarket, you are probably planning on making homemade pizza. And there is no problem with that! Homemade pizza is a favorite in my house. My kids could eat pizza every night, if allowed. Homemade pizza is even better because you can top it with whatever you want, the best way to eat pizza is YOUR favorite way, after all.

But back to the dough. Do you ever consider making other things with that it? A great pizza alternative is a calzone. You can put whatever you want inside of the dough and bake it until it’s golden brown and the melted cheese is ready to ooze out. One of the easiest calzones to make is a ham and cheese calzone.

Ingredients Needed

  • Ham
  • Cheese
  • Dough
  • Garlic Powder
  • Onion Powder
  • Flour
  • Olive Oil
  • Butter

Easy To Make

If you are able to make homemade pizza and can figure out how to assemble a sandwich, you are equipped to make a ham and cheese calzone. Seriously, it’s so easy. Just spread out the dough to the length of a baking sheet. You will need to flour your hands and/or the dough so that it is pliable and doesn’t stick to your hands while you stretch it out. Add a little bit of olive oil to the baking sheet so the calzone doesn’t stick to the pan. Add the stretched out dough to the pan and start creating your masterpiece!

On one side of the dough add a piece of deli ham, then cheese. Keep repeating the pattern until you cover the length of the dough. Fold over the dough so that you cover the ham and cheese completely and press the edges together to seal the dough. Pretty easy so far, right? And you are practically done! All that is left is to brush on the melted butter on the top of the dough and season it with garlic and onion powder. Then bake. And then the hard part, waiting for it to be done!

Dig In

Once the ham and cheese calzone is cooked, you do have to wait a little longer. You don’t want to cut into it too soon because the cheese will just ooze out of it. Just give the calzone 5-10 minutes before cutting into it and it will be worth your while. Once you are ready to dig in, you will be in awe at how great of a cook you truly are!

Everyone will want to devour this so make sure you plan accordingly and make enough for your tribe. And if you want leftovers, it’s probably best to make 2 or 3 ham and cheese calzones! ENJOY!

Ingredients

  • 1 ball Pizza Dough
  • 1 tbsp Flour
  • 1 lb Ham deli meat – any flavor will work!
  • 3/4 lb Cheese American works best for melting
  • 1 tbsp Olive Oil
  • 1 pat Butter Melted
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Parsley

Instructions

  • Preheat oven to 450 Degrees F

Preparing the Dough

  • Put olive oil on baking sheet and swirl around well to cover entire pan – best to put a ziplock bag on your hand to swirl the olive oil around.
  • Next, sprinkle flour around pizza dough evenly so that you can handle the dough without it sticking to your hands.
  • Stretch out the dough to form a rectangle that will cover the baking sheet.
  • Once the dough has stabilized in the pan, you can begin making the calzone.

Adding the Filling

  • Fold a piece of ham in half and place it at the top of the dough, on one side of the dough, leaving approx 1/2" on the side.
  • Next, place the cheese slice on top of the ham about 1/2" – 1" down from the top of the ham.
  • Repeat ham and cheese placement until you have covered the entire length of the dough.
  • Fold over the empty dough side over the ham/cheese side and press the edges together so they are sealed around the entire calzone.
  • Brush melted butter on top of calzone.
  • Sprinkle parsley, onion powder, and garlic powder on top of the calzone.
  • Bake in preheated oven for 12-15 minutes or until golden brown.
  • Once cooked, remove from oven and let cool for 5-10 minutes. Calzone will be extremely hot.
  • ENJOY!

Egg Salad

Egg salad is the perfect way to eat those Easter eggs for lunch. Did your kids enjoy dying eggs this year? I’m sure they did! And I’m sure they wanted to do multiple eggs in order to try out different egg dying techniques. So much fun! But what the heck are you going to do with all of those eggs now that Easter is over?? Who could possibly want to eat 12 – 24 hard boiled eggs before they go bad? What to do, what to do…I know, you should make egg salad sandwiches! What a GREAT idea for lunches!

Notice how my egg salad (pictured above) is all different colors? It probably looks a little weird. It’s because when we dyed Easter eggs, the food coloring seeped through the shells and dyed the actual eggs! It’s all good though, we used food coloring which is supposed to be used on edible goodies. In the case of this egg salad, it looks a little funky though, but definitely okay to eat. It’s a fun egg salad!

Ingredients Needed

Besides the eggs that you dyed for Easter, you won’t need many other ingredients. And the best part is that you probably already have everything in your cabinet. Therefore, when you get that craving for an egg salad sandwich, you shouldn’t need to run out to the grocery store to get everything.

Here is what you will need:

  • 8 Hard Boiled Eggs Smashed Up
  • 1/2 cup Mayonnaise
  • 3/4 tsp Salt
  • 3/4 tsp Worcestershire Sauce
  • 3/4 tsp Yellow Mustard Any kind is fine – if you like spicy, try dijon. If you like sweet, try honey mustard. I prefer regular yellow mustard for mine.

A Different Lunch Idea

Egg salad is good any time of the year actually. You don’t have to eat it just once a year, you can whip up this sandwich filling any time. The ingredients are minimal. And boiling eggs? It’s pretty easy! You don’t have to be a gourmet cook to make this nutritious lunch, that’s for sure! Easy and delicious meals – those are my favorite!

Oh, and it’s cheap to make. That’s another favorite thing of mine. You could whip up a batch of this in 15 minutes and make enough for a week’s worth of lunches. How great is that? And the cost is next to nothing. I believe it’s less than $2.50 for a dozen white eggs. Add in the cost of the mayo, salt, worcestshire sauce, mustard, bread and you can make lunches for under $6.00 for a WEEK! A week! A cheap lunch idea that is much healthier than fast food and less expensive. It’s a huge win!

Making the Salad

If you know how to boil eggs, you got this! If you don’t know how to boil eggs, you can still make this. Just have to put some eggs in a pot of water and boil the water (with eggs in it). Done! How easy was that? Now, let the eggs cool down – best to do this by putting them in cold water for 10+ minutes. Once cooled, peel the shells. Put the hard boiled eggs in a bowl, smash them. Then add mayo, salt, worcestershire sauce, and mustard and mix thoroughly. Finally, just scoop some of the egg salad onto your favorite bread and your lunch is served. Easy-peasy!

Hard Boiling Eggs

  • Carefully place eggs in pot and cover with water.
  • Turn heat on stove to medium high and bring to a boil.
  • Once water boils, turn heat down to medium low and cook for an additional 8 minutes.
  • When time is up, immediately place boiled eggs in ice water to cool completely. Will take several minutes, but can remain in there as long as you like.

Making Egg Salad

  • Peel hard boiled eggs and place in a medium size bowl.
  • Smash up the eggs.
  • Next, add mayonnaise, salt, worcestershire sauce, and mustard.
  • Mix all ingredients thoroughly so that the eggs are covered with everything.
  • Eat as is or scoop the egg salad onto your favorite bread to make a yummy sandwich.
